Move over classic potato salad; there's a new dish in town. This Bacon and Blue Cheese Potato Salad is a fresh and flavorful take on the classic recipe. In fact, I'd take this over the classic recipe any day!

Begin by cooking your bacon. Crumble and set aside.
While your bacon cooks, bring a large pot of water to a boil. Once boiling, add the potatoes and cook until tender. Depending on the size of your potatoes, this will take 15-20 minutes. Drain, cool, and cut your potatoes into 1-inch chunks.
To a large bowl add the potatoes, bacon, green onion, and blue cheese.
In a small bowl, whisk together the olive oil, white vinegar, sugar, black pepper, and salt. Drizzle this on top of your potato mixture. Toss with a large spoon or spatula to combine.
Chill for at least 1-2 hours before serving.
