Homemade Pancake Mix

One of my go-to's for breakfast is pancakes. And today I'm sharing my Homemade Pancake Mix recipe with you. Just whip up a batch of this dry mix every couple of months, and you'll be ready to make pancakes whenever your heart desires.

Ingredients

Dry Mix:
  • 3 1/2 cups flour
  • 1/3 cup sugar
  • 4 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
Wet Mix:
  • 1/2 cup buttermilk
  • 1/2 cup milk
  • 1 egg
  • 1 tablespoon melted butter
  • 1/2 teaspoon vanilla extract

Instructions

  • To prepare the pancake mix, add the flour, sugar, baking powder, baking soda, and salt to a large jar or container. Use a whisk to thoroughly combine all the ingredients. This pancake mix can be stored for up to three months.
  • To prepare the pancake batter, add the buttermilk, milk, egg, melted butter, and vanilla extract to a medium bowl. Whisk together to combine. Add 1 cup of the prepared dry mix. Stir until just combined. Let the mixture sit for1-2 minutes before cooking.
  • Set your griddle on medium-low heat. Brush with butter. Allow the butter to melt. (Optional: Remove any excess butter with a paper towel.)
  • Pour 1/4 cup* of the batter onto the hot buttered griddle. Cook the pancake until bubbles form on the top and the bottom is golden. (This will take bout 4-5 minutes.) Flip the pancakes and cook about 2 more minutes until golden.
  • Serve with butter and pure maple syrup.
  • This recipe will make 10 pancakes with dry mix left over.

Notes

*1/4 cup of batter makes a 3-inch pancake. You can create a larger or smaller pancake by adjusting the amount of batter you use.
