Begin by spraying a 9x13-inch baking dish with baking spray. Arrange the slices of bread in the pan, slightly overlapping each slice. Layer the apple slices over the bread. Set aside.
In a large bowl, whisk together the milk, eggs, sugar, vanilla, salt, cinnamon, and ground nutmeg. Whisk until well blended. Pour this mixture over the apples and bread.
In a small bowl, combine the cinnamon and sugar. Sprinkle over the casserole. Cover with aluminum foil and refrigerate overnight.
