Cinnamon Simple Syrup: In a saucepan, combine 1 cup of water with 1 cup of sugar. Bring to a boil over high heat and cook until the sugar dissolves and the liquid just starts to thicken. Transfer the liquid to a heatproof container, add the cinnamon sticks, and chill for at least 4 hours.
Prep the Fruit: Slice your apple, pear, and orange into thin wedges.
Mixing Time: In a large pitcher, combine the sliced fruit, pomegranate seeds apple cider, apple brandy, and your chosen light-bodied Spanish wine.
Sweeten the Mix: Stir in the cinnamon simple syrup to your desired sweetness. Add a couple cinnamon sticks.
Chill: Refrigerate the mixture for 2-3 hours. This allows the flavors to meld beautifully.
