Wow. I sincerely hope that the weather has been as wonderful where you are as it’s been here. The temperatures officially passed 70 degrees today. Last year, it took until April 26th to get this nice.
I’m just so incredibly thankful for this weather and sunshine. I’m soaking it up as much as I can.
Over the past couple days I’ve been busy cleaning up some of the nastiness that winter left behind.
Tuesday, I swept of my porch and whipped down all my porch furniture. Raked the yard and dug for signs of spring.
I found some.
I also broke out my grill and cooked up some chicken and veggies. Honestly, you can’t beat chicken on the grill.
I marinated mine all day in Kraft’s Light Sesame Asian Dressing. (I think that’s what it is called.) Delicious! The veggies got a drizzle of olive oil and lemon juice and a dash of salt and pepper.
Then last night I made roasted cabbage.
I never thought of myself as a big fan of cabbage, but this was to die for! By the end of the night, I ending up eating the entire head. So delicious and so simple. Click here for the recipe. I found it via Pinterest of course!
I’ve also been fortunate enough to squeeze in a five milk walk/run/jog every day this week. I even got a little suntan on my face … in March!! Can you believe it!?
