As I mentioned earlier this week, my overall diet for the summer has been downright terrible. Because of this, I’m now convinced that diet really does affect a person’s mood. A diet heavy on sweets, carbs, and a few beers here and there has left me feeling so tired and sluggish. This week when I went grocery shopping I filled my cart with fruits, veggies, yogurt, almonds, and lots of other healthy goodies!
That means I’ve been eating lots of salads, oatmeal for breakfast, and snacking on fruits. I’ve also been drinking a lot more water. And you know what, I’m already feeling more energized and focused. It’s actually pretty amazing. I wanted to share my Tuesday night dinner with you as I was really pleased with the way it turned out. I think it would make an awesome main course for a small get together. I’m calling it a Veggie Wedgie Salad.
Fair warning, this is one of those no-recipe recipes. I’ll share what I did, but feel free to mix it up and serve it any way you like. I think the real trick here is the presentation.
Veggie Wedgie Salad
Here’s what you’ll need for one salad:
1 head of romaine lettuce, cut in half
1 cup vegetables, diced
1/2 cup chicken, diced
2 tablespoons blue cheese crumbles
1/4 cup croutons
2 tablespoons light blue cheese dressing
Let’s get cooking:
Lay the halved head of romaine lettuce on a plate. Sprinkle with diced vegetable, chicken, cheese, and croutons. Then drizzle with blue cheese dressing.
That’s it!
You can use whatever vegetables you love. For this particular salad, I used cherry tomatoes, corn, carrots, green olives, and red onion. I highly recommend this combination. What I particularly love is that all the veggies are diced into small pieces. This way, when you are eating the salad you are able to get a little bit of everything in one bite. It takes a little more time to prepare, but it is totally worth it. I learned that little trick from my grandparents.
I also decided to use those slate boards I got a while back. With things set slightly off center, it’s such a unique way to present the salad. Plus, there is room for your flatware!

I’ve been eating a little unhealthy lately as well and this is just the thing for a good light meal but with a little nutrition. Although I would eat mine without the dressing because I’m just wierd like that. LOL!

I absolutely ADORE wedge salads but always feel guilty eating them (is there really anything redeeming about bacon and blue cheese)? This is such a great way to dress it up and make it way healthier. Can’t wait to try it, thanks for the idea!

I’m not much of a salad fan, but this looks delicious! I completely agree with you that you are what you eat – cutting out some sugar and carbs can really energize you.
When I do have salad, I really like sunflower seeds or almonds for toppings.

The salad composite is nice, the dressing….not so much. if you are serious about eating
right, may i suggest avoiding cheeses and mayo type dressings…..there are many dressings
that one can make very simply without so much fat and dairy. Try eating more greens
with a simpler dressing. Avoid the creamy and fatty types. Yes, i know, a lot to ask, but
it is after all for your well being. You will appreciate……good luck! S.

Want to share a very refreshing summer drink I made up for fourth of July. It would go great with the salad.
At the bottom of a tall glass place a quartered piece of lime, 2-3 thin slices of seedless cucumbers, and a few fresh from the garden spearmint leaves. Mash it all together (I used the bottom of my wooden meat mallet). Into the glass squeeze some fresh lime juice, 1/4 cup of limeade, and fill the rest of the glass with water, leaving room for ice. Rub lime around rim of glass along with a spearmint leaf. Stir and top with ice.
So yummy and refreshing. I was hooked for a week. And a great way to use the mint that grows like a weed.
