I have been wanting to make this Shaved Brussels Sprout Salad for years. Yes, years. There is a little Italian restaurant a few miles down the road from where I live and they used to have a shaved brussels sprout salad on their menu. It was love at first bite. The combination of flavors is just spot on. Here’s why:

  • The pecorino Romano cheese is creamy and salty.
  • The pine nuts add crunch and toastiness.

This is a salad recipe that can be served all year long, but I especially love it in the fall when you can get delicious, in-season apples. Plus, because I feel like the fall is loaded with heavy, filling recipes, a bright and fresh salad is a welcomed addition.

I also love how easy this Shaved Brussels Sprout Salad is to put together. The only thing that takes a bit of time (but honestly not that long) is slicing up the Brussels sprouts. I prefer to do this by hand with a knife, but you could use a mandoline or food processor if you wanted. You can also purchase pre-sliced Brussels sprouts, but they don’t feel as fresh as I’d like for this particular recipe.
