Makes one quart jar salad
Here’s what you will need:
Mixed berries (strawberries, blueberries, blackberries)
Red quinoa, prepared
3-4 tablespoons Berry Vinaigrette*
In a quart sized wide-mouth mason jar, layer ingredients in the order listed minus the berry vinaigrette. Use as much of each ingredient as you like.
Once all the ingredients are in place, tuck a piece of parchment paper (about 8″x8″) into the top of the jar. Make a well in the paper, leaving the edges of the paper hanging over the lip of the jar. Gently spoon the berry vinaigrette into the parchment paper well. Seal with the lid.
1/2 cup fresh berries (strawberries, blueberries, blackberries)
2 tablespoons cherry juice
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
Salt and pepper to taste
In a blender, combine the fresh berries, extra virgin olive oil, cherry juice, balsamic vinegar, salt and pepper. Pulse until smooth.
