2 cups purple cabbage, thinly sliced
1/4 red onion, thinly sliced
1 cup matchstick carrots
4 kale leaves, diced
Dressing
1 cup mayonnaise
1 lemon, juiced
1 tablespoon grainy mustard
2 tablespoons honey
Salt and pepper to taste
In a large bowl, combine the cabbage, onion, carrots, and kale.
In a separate bowl, whisk together the mayonnaise, lemon juice, grainy mustard, and honey. Add salt and pepper to taste.
