Here’s what you will need:
1 store-bought pie crust (or you can make your own)
2 tablespoons all-purpose flour
1/2 cup sugar
1 teaspoon orange zest
3 ripe peaches, sliced
2 tablespoons fresh orange juice
1 teaspoon vanilla extract
1/3 cup fresh blueberries
1 tablespoon coarse sugar
Vanilla ice cream (optional, but highly recommended)
Begin by preheating your oven to 400 degrees F. Then line a baking sheet with parchment paper. Roll out the crust and prepare a scalloped edge, if desired. Set aside.
In a large bowl, mix together the flour, sugar, and orange zest. Add the peaches, orange juice, and vanilla; gently toss to coat.
Arrange the peach slices in rows down the center of the unrolled crust, leaving a 2-inch board. Spoon any remaining mixture from the bowl over the peaches. Then, sprinkle on the blueberries. Carefully lift the edges of the crust over the peaches.
In a small bowl, whisk together the egg. Brush it over the pie crust and then sprinkle the crust with coarse sugar.
Bake for 30 – 35 minutes or until the crust is golden and the filling is bubbly. Cool until warm and serve with a generous scoop of vanilla ice cream.
