Makes one quart jar salad

Here’s what you will need:
3- 4 tablespoons Citrus Vinaigrette*
Garbanzo beans
Yellow pepper, chopped
Sugar snap peas, halved
Quinoa, prepared
Dried apricots, chopped
Arugula
Parmesan cheese, shaved
Almond slivers

In a quart sized wide-mouth mason jar, layer ingredients in the order listed. Use as much of each ingredient as you like. Pack tightly and seal with the jar lid.

*Citrus Vinaigrette
3/4 cup extra virgin olive oil
1/4 cup white balsamic vinegar
3 tablespoons lemon juice
3 tablespoons orange juice
1 tablespoon honey
1 garlic clove
Salt and pepper to taste

In a blender, combine the extra virgin olive oil, white balsamic vinegar, lemon juice, orange juice, honey, garlic, salt, and pepper. Pulse until smooth.
