February in a Nutshell


Here we are again, at the start of another week and another month. I haven’t done a monthly recap since November, so I thought it was time to throw one in the mix.

As I listened to Oprah’s book this weekend, I was reminded of why I started these little recaps. Too often I think about all of the things that I haven’t yet finished or still need to get done. And while that can be helpful for growth, I’m learning to focus more on accomplishments and things to be thankful for no matter how small. I hope these posts remind you to do the same.

I actually decided to combine January and February in this nutshell post. So, In case you missed anything, let’s take a look back at the past two months.

Around the house I packed up the holiday decor and made my living room ready for any impromptu get-togethers. I also showed you a few ideas for adding some color to your home in the winter months. I tackled a long overdue project in my entryway and created a place to hang coats. I also got some new furnishings in my bedroom, making it a space I just love. Finally, I updated the wall above the fireplace in my guest bedroom with a simple geometric shape.

For some strange reason, I cooked a lot during the past two months. I think my body was in nesting mode given how much snow we’ve had this winter. I won’t list all of the recipes I made (You can find them here.), but I did want to mention a few of my favorites. First up, these Oven Fries with Gorgonzola Dipping Sauce are the bomb. Such a fun side dish. I also tried some healthy fare with these Chili Beef Wraps. This recipe is definitely a keeper. Because I love pasta, I needed to experiment with that too. This Bacon, Onion, and Goat Cheese Pasta is hardy with just a touch of spring freshness. And no IBC recipe list would be complete without dessert. Peanut Butter Cup Rice Krispies Treats were perfect for Valentine’s Day. I also started A Year of the Skillet this month and kicked things off with a Skillet Cookie Cake and a Chocolate Skillet Cake.

In February I threw a 60th birthday party for my mom. You can get all of the party details here. I also shared the recipe for the Roasted Parmesan Garlic Shrimp I served as an appetizer plus how to make the DIY Tassel Garland I used in decorating for the big event. Be sure to stop back tomorrow to get the recipe for the White Chicken Chili which was the star of the party.

Finally, we talked a little about life, too. I shared my goals for 2015, found a way to be 10% happier, and started a new series called What I Know for Sure.

    I really love all of your posts! Your photos are so awesome-I first look at the photos and THEN I read the post-kind of like a magazine. The recipes are fantastic! I think that you must have a ton of tips on feeding people breakfast- maybe post more breakfast stuff or make it a new “special” part of your blog. I like the little breakfast pie recipe-so awesome!
