Mint Chocolate Shortbread Cookies:

I’m pretty sure my brain was still on vacation this past weekend. For some reason (I blame the festive pictures flooding social media.), I thought St. Patrick’s Day was Saturday. Strangely, it didn’t occur to me until this morning to check a calendar. That’s when I realized that tomorrow is March 17 – the day it’s celebrated every year. Sometimes I just need an embarrassing “duh moment” to get back to reality.

Anyway, Happy St. Patrick’s Day!  Today  we  are  making  these  Mint  Chocolate  Shortbread  Cookies.

Even though I don’t make a big deal about this holiday, each year I like to make something that fits the green / Irish theme. Last year I shared some delicious Guinness Floats, this year it’s shortbread cookies. But not just any shortbread. These are Mint Chocolate Shortbread Cookies, with sprinkles!

I wanted to make these a few weeks ago, but I couldn’t find the right shortbread cookie cutter (here’s where I finally find this perfect one) or the lime green sprinkles that I wanted around here. I ended up ordering them online, and they arrived last week while I was away.

However, these cookies turned out well and aren’t over holiday-themed so you can certainly make them anytime you’d like.

This shortbread recipe comes from Ina Garten. I saw it years ago on Barefoot Contessa and have wanted to make it ever since. That’s part of Ina’s appeal: she makes everything look so easy and delicious. Since I love an Andes mint after dinner, I thought it would be fun to switch the recipe up a little bit. Sweet silky chocolate combined with the freshness of mint is just so right. Spread this on shortbread and add some sprinkles and you really can’t go wrong.

Don’t worry, however, if mint chocolate isn’t your jam. Feel free to coat these cookies in whatever you’d like or you can leave them plain. They are just as good. Let’s get baking!

How to Make Mint Chocolate Shortbread Cookies:

In a medium-size bowl, sift together the flour and salt. Set aside. For your convenience, there is a full ingredient list and detailed instructions in the printable recipe card below.

In the bowl of an electric mixer using the paddle attachment, cream together the butter and one cup of sugar until just combined. Add vanilla and combine. Slowly add the flour mixture and mix on low until the dough starts to come together. Transfer dough to a lightly floured surface and shape into a flat disk. Wrap in plastic and chill for 30 minutes.

Preheat your oven to 350 degrees F.

Roll out the chilled dough to 1/2-inch thick and cut with a finger-shaped cutter. Place the cookies on an ungreased cookie sheet and sprinkle with sugar. Bake for 20 to 25 minutes or until the edges just begin to brown. Remove from cookie sheet and allow to cool completely.

Next, melt the Andes mint candy pieces in the microwave for 30 second intervals or use a double boiler.

Line your counter with wax or parchment paper. Dip 1/3 of each cookie into the melted mint chocolate. Shake off any excess chocolate and set on the wax paper to cool. Before the chocolate sets, add sprinkles.

Instructions

DIY Travel Photo Collage | Inspired by Charm

I’ve been extremely fortunate these past couple years in that work and life have taken me on some travel adventures. As much as I love being home, traveling has become one of my hobbies. Travel brings me so much joy and countless memories.

One of my favorite recent trips was the Carnival cruise I took with my mom. Not only was it wonderful to spend a week on the sea with her, but she really deserved it. In addition to her job, she takes care of my elderly grandparents who now require 24-hour care. Giving her a week of Caribbean sunshine, delicious food, total relaxation, and endless entertainment was something I was so honored to be able to do. Cruising is such an easy way to do that and more. Everything you want in a vacation is at your fingertips.

As you know, I took lots of photos on our cruise. Because everything is digital these days, I find that many of my travel pictures get uploaded to my computer and then are long forgotten. I wanted a fun way to remember the time on that grand ship, so I came up with two alternatives for creating a DIY Travel Photo Collage that I’d like to share with you today.

Let’s get started!

This first collage is made in a shadow box frame. Along with some mini clothespins and a touch of gold (of course!), it’s a quick and colorful way to show a series of photos, and it can be easily changed or updated.

Here’s what you will need:
shadow box frame
coordinating paper
mini clothespins
photos
glue (hot glue or E6000)
double sided tape
scissors
ruler
pencil

Begin by gathering your supplies. Most of these items can be found at your local craft store or online.

Cut a piece of paper to fit the size of your frame. Any color or patterned paper will work. I’m using this gold wood grain paper which is actually leftover wrapping paper from the holidays. With a pencil, just trace the backing of the frame onto the paper and then cut it out.

If your paper is flimsy like mine, you’ll want to use some double sided tape to adhere it to the backing of your frame, the piece of paper typically included in the frame, or a thicker piece of card stock.

Then, tuck your photos into your mini clothes pins and arrange them on the paper to get an idea of the layout you’d like. Since my paper was highly patterned, I used a theme of blue and green for both my pictures and my clothespins.

Next, measure exactly where the clothespins will attach to the paper. Since my frame was 12 x 12″, I started in the center with my first clothespin and set one on each side three inches away. I repeated the same measurements with the second row.

To attach the clothespins, I applied a very small amount of hot glue to each clothespin and then placed it where I wanted it on the paper. (E6000 would work here as well; just be sure to give it time to dry.)

Once all the clothespins are in place, tuck in your pictures and assemble the frame.

I thought this particular collage turned out great. All of these photos trigger such great memories of the time I got to spend with my mom. There were beautiful sunsets and sunrises we could watch off the balcony of our stateroom, we were able to enjoy fun and relaxing days when we ported, and the gorgeous palm trees always remind me the ocean is nearby. As you can imagine, just by varying the paper, clothespins, and photos, you can create something that is truly customized to your space.

This collage also perfectly captures the memories of our cruise. While I took a few photos of this collage on my mantel, it will ultimately reside on my hallway gallery wall where I can see it every day.

Okay, ready for collage number two?

This one is a bit more of a traditional collage-style, but with a modern twist. A cut out chevron / arrow pattern reveals a collection of pictures in the negative space. The finished piece has a more modern feel, but is still bursting with memories. Let me show you how to make it.

Here’s what you will need:
8 x 10″ photo frame
cardstock
chevron printable (free PDF download here)
photos
double-sided tape (or rubber cement)
scissors
x-acto knife
ruler

If you want to make this exact collage, I’ve provided a free PDF printable here. However, you’re welcome to create your own in any shape or pattern you like. Begin by printing off your pattern on a piece of card stock.

Carefully cut out the design using an x-acto knife. Do this on a self-healing mat, scrap piece of wood, or another surface you don’t mind damaging.

Then, on a second piece of card stock, start arranging your photos in the areas that will show through in your design. I used a couple different sized photos. I also removed any white borders around my photos so the photos would blend almost seamlessly together.

Once you are happy with the placement of your photos, attached them to the sheet of uncut card stock with double sided tape or rubber cement. (Rubber cement is better than standard white glue because it won’t cause your photos to curl or bubble.) With all of the photos secured, attached the cut out card stock to the top with double sided tape or cement.

Place the finished piece in your frame, and your project is complete.

This piece lets you display multiple photos in a really fun pattern. From a distance, it looks like a piece of modern art, but upon closer inspection, it’s a travel keepsake and memory inducer. The best of both worlds. Now, all I have to do is open my eyes and I’m transported back to the Carnival cruise with my mom.

I managed to sneak away from the never-ending PA winter and transplant myself in sunny California this week. Hence, the lack of posts the past couple of days. More on my trip to CA soon.

Today, I’m keeping it sweet and doing my best to channel summer with these berry cobblers. Packed with fresh, juicy berries, the classic flavors of this dish are complemented with a hint of citrus: orange juice in the berries and orange zest in the dough.

I’ve made quite a few cobblers in my day, and I was really pleased with the way this particular dough turned out. It’s crisp on the outside and light and flaky on the inside. That’s my kind of cobbler.

While you could certainly go with any combination of berries, I opted for the four traditional ones: strawberries, blueberries, raspberries, and blackberries.

Topped with ice cream, a few more berries, and a sprig of mint, you’re going to love this dessert.

Mini Skillet Berry Cobblers

(Makes 6 mini skillets)

Here's what you will need:
5 cups mixed berries
1/2 cup sugar
2 tablespoons butter, melted
2 tablespoons orange juice, freshly squeezed
1 1/2 cups all-purpose flour
1/3 cup sugar
2 tablespoons orange zest
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup cold butter, cubed
1/2 cup buttermilk
Vanilla ice cream, fresh mint, and fresh berries for garnish

Begin by preheating your oven to 350 degrees F.

Then, in a medium-size bowl, gently toss together the mixed berries, sugar, melted butter, and orange juice. Set aside.

In a large bowl, whisk together the flour, sugar, orange zest, baking powder, and salt until combined. Then, cut in the cubed butter with a pastry blender or fork until crumbly. Add the buttermilk, stirring until the ingredients are moistened. On a lightly floured surface, turn out the dough and knead until just combined (about 4 - 6 times). Pat the dough into a 1-inch thick, 6 x 4 inch rectangle. Cut into 6 squares, then cut the squares diagonally in half to form 12 triangles.

Lightly grease your skillets and arrange them on an aluminum foil-lined baking sheet. Divide the berry mixture among the skillets. Place 2 dough triangles over the berry mixture in each of the skillets.

Bake at for 22 - 26 minutes or until the fruit bubbles and the crust is golden. Cool for about 15 minutes before serving. Garnish with ice cream, extra berries, and sprig of mint.

I know that this is A Year of the Skillet, but sometimes I wish I’d declared it A Year of Pasta Salads. Maybe next year – because I really do love pasta salad. Actually, I love pasta however it’s served.

People often ask “What is your favorite food?” or “If you could only eat one thing for the rest of your life, what would it be?” Well, I’m announcing that mine would be pasta, under the condition that I could fix and mix it in whatever way I wanted. Although some folks might not agree, in my opinion, pasta is a blank canvas – the perfect backdrop for the ingredients it’s paired with.

I want to explore and taste all the pastabilities!

Roasted Vegetable Pasta Salad | Inspired by Charm

Today I’m dreaming of summer picnics with burgers hot off the grill, succulent corn on the cob, and a bowl of colorful pasta salad. This Roasted Vegetable Pasta Salad is a delicious twist on the classic recipe. I’m not sure it’s accurate to say this, but this version may be a tiny bit healthier than the traditional variety. This one is loaded with vegetables rather than gratuitous amounts of cheese and pepperoni.

I particularly enjoy this recipe because of the roasted vegetables. Roasting veggies in the oven is one of the easiest and most flavorful ways to cook them. Combine the pasta and roasted vegetables with a splash of pesto sauce, and you have a combination that’s hard to beat.

Also, unlike traditional pasta salad, this salad is served right away, at room temperature. You can chill the salad if you’d like, and to me, it is just as good.

Okay enough talking, let’s get cooking.

Roasted Vegetable Pasta Salad | Inspired by Charm

Roasted Vegetable Pasta Salad

Here's what you will need:

1 1/2 cups zucchini (1 medium), chopped
1 1/2 cup yellow squash (1 medium), chopped
1 cup red onion (1 large), chopped
3/4 cup green pepper (1 medium), chopped
3/4 cup red bell pepper (1 medium), chopped
1 small eggplant, chopped
3 tablespoons olive oil
12 ounces whole wheat penne
1 cup pesto sauce (homemade or store-bought)
2 cups cherry tomatoes, halved
Salt and pepper to taste
Fresh basil, julienned for garnish

Begin by preheating your oven to 400 degrees F. In a roasting or sheet pan combine zucchini, yellow squash, onion, peppers, and eggplant. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat. Roast for 45 to 50 minutes or until the vegetables are tender. Stir a couple times throughout the roasting process.

Transfer the roasted veggies to a very large bowl.

Meanwhile, cook the pasta according to the package directions. Drain, rinse, and cool slightly. Add the pasta to the roasted vegetables and gently mix together.

Next, add the pesto and stir gently to coat the pasta and veggies. Finally, mix in the cherry tomatoes and season the salad to taste with additional salt at pepper. Garnish with fresh julienned basil.

I don’t like soup; I’ve never liked it. I literally roll my eyes at chicken noodle soup. (It probably rolls its eyes right back at me.) There’s only one exception to this aversion – cream soup, the kind made with heavy cream that coats your tongue in silky deliciousness. Think corn chowder, lobster bisque, etc. I also love chili.

Also, (I feel like I say this for every recipe.), this is so simple to make. Once the chicken, onion, and garlic are sautéed in a pan (or in your slow cooker if you have one that allows you to do such things), the rest of the chili comes together in the slow cooker. Set it and forget it.

This White Chicken Chili recipe is easily one of my favorite things to make when the weather gets cold. It's simple to make in a slow cooker, feeds a crowd, and is so delicious!

Ingredients

  • 2 boneless and skinless chicken breasts - diced
  • 1 large onion - chopped
  • 4 large garlic cloves - diced
  • 1 tablespoon olive oil
  • 2 cups chicken broth
  • 1 teaspoon cumin powder
  • 1 cup Chardonnay - dry and buttery, if possible
  • 1 can (15 1/2 ounces) great northern beans - drained
  • 1 can (15 1/2 ounces) chickpeas - drained
  • 2 cans (11 ounces) sweet white corn - drained
  • 1 can (4.5 ounce) diced green chilies - drained
  • 8 ounces Monterey Jack cheese - shredded (plus extra for garnish)
  • Salt and pepper to taste
  • chopped parsley for garnish - optional

Instructions

  • In a large skillet with olive oil, sauté the diced chicken, onions, and garlic.
  • In a 5-quart slow cooker, add the cooked chicken, garlic, and onions. Then mix in the rest of the ingredients. Salt and pepper to taste. Set the slow cooker to high and heat for 45 minutes to 1 hour until the chili is hot.
  • Serve in a bowl and garnish with Monterey Jack cheese and chopped parsley for color.

What I Know for Sure | Inspired by Charm

I’ve never really been great with understanding how I feel and then expressing it in words. So often I hear or read something and get goosebumps because it’s exactly how I feel; I just never realized it or knew how to explain it. Does that make sense? I think this is why certain books, songs, or movie / TV quotes have such a profound effect on me. In a weird way, they help me understand myself. I think this is also why I’m a self-help book junkie.

Anyway, this past week was the pits. I blame it on the winter weather, but who knows. I was really craving a Starbucks so I made the split-second decision to jump in my car and drive 1.5 hours to get my favorite White Chocolate Mocha. Yes, I live that far from Starbucks. (I figured I could run a few other errands along the way.) Honestly, I think I just needed an excuse to get out of the house. I also decided to listen to an audio book along the way: Oprah Winfrey’s What I Know for Sure.

It might not come as a surprise to you, but I absolutely fell in love with this book. This is not going to be a review, but I will tell you that the book details the many things Oprah’s come to know for sure in life – her own private revelations about life. For example: “If you make time for a little gratitude every day, you’ll be amazed by the results.” “You have nothing to prove to anyone but yourself.” “Having the best things is no substitute for having the best life.”

It’s a feel-good and inspiring book that reminded me how amazing life is and how blessed we are to be alive. At the end of the first chapter, Oprah challenged me (and the millions of others reading this book) to ask myself what I know for sure. She explained that doing this would help me find myself. As you know from the goals I shared earlier this year, finding and loving myself is the crux of what I’m trying to do.

I actually attempted to come up with a list of things I know for sure, but I felt like a phony when I began to write them down. Granted, after reading a lot of self-help books, there are oodles of things I know for sure; I’m just not the best at practicing them. So, is it fair for me to dispense advice on things that I’m not great at doing myself? I honestly don’t know. Though that’s not going to stop me.

What I do know for sure is that practice makes perfect. Life is scary. Fear of failure and rejection is real. It certainly prevents me from doing so much. I’ve found that the first step is often the hardest. If you can get past that, the rest is a piece of cake, relatively speaking. The more you do the thing you’re afraid of, the better you’re going to get at it. Time is going to pass anyway, so you might as well spend it trying rather than worrying. Worst case scenario, you realize whatever it was, wasn’t for you. It wasn’t your dream so you stop. If you fail (and sometimes you will), pick yourself up and realize that you’re still standing. Best case scenario, you get better everyday. You tried. You win. You gain a new skill. Do it for yourself, and be yourself while doing it, and you’ll be unstoppable. This I know for sure.

Breakfast Pie | Inspired by Charm

Looks like it’s recipe week again on IBC. I hope you don’t mind.

For five years, I was the breakfast cook (dare I say, chef) at my little B&B. I made breakfast almost every single day for up to 12 people. A typical breakfast included pancakes, scrambled eggs, sausage, fresh fruit, and some baked sweet. Coffee, tea, and OJ, too. I always served family style so there was plenty of food. And while I had a collection of go-to dishes, I also enjoyed trying new recipes. For a long time, breakfast was kind of my thing.

Since I closed my B&B more than two years ago, I haven’t cooked that kind of big breakfast. I love any meal, but breakfast / brunch is probably one of my favorites. I haven’t posted a breakfast recipe on the blog for a while, so I thought today would be a good day for one.

I’m sharing these Breakfast Pies. They are individual-size savory pies that are easily customizable and the perfect fancy self-contained breakfast treat.

The dough or shell is frozen puff pasty you can buy at the grocery store. The pastry is scored to create a little rim on the outside and then is pre-baked.

Once the pie shell is ready, the contents are limited only by your creativity and appetite. I’m going to share two ideas with you today.

The first: bacon, spinach, Swiss breakfast pie

Obviously, if you don’t like one of these things, don’t use it; if you like something else, add it.

I love these pies as an elegant breakfast treat. They are perfect for days when you want to spend a little extra time on breakfast, but don’t want the mess and work of preparing a full breakfast. Everything is contained in one delicious and easy-to-eat package.

Beyond baking the shell, which I’ll share in the recipe, this is one of those recipes where you really don’t need a recipe. You just need to make sure to have the things you like on hand.

Breakfast Pie

Here's what you will need for 4 pies:
1 sheet puff pastry dough, thawed
4 eggs
Fresh thyme or parsley for garnish (optional)
Salt and pepper

Pie #1
Sliced bacon, cooked
Swiss cheese, shredded
Spinach, roughly chopped

Pie #2
Sliced mushrooms, sautéd
Cooked ham, sliced
Cheddar cheese, shredded
Cherry tomatoes, sliced in half

Begin by preheating your oven to 350 degrees F.

Cut the puff pastry sheet into 4 equal squares and place on a baking sheet lined with parchment paper.

Using a knife, score a 1/2-inch edge around each pastry square, cutting about halfway through the dough. Bake for 10-12 minutes until puffed and golden.

Remove the pastry squares from the oven and push down the inner portion of the dough with a spoon or spatula to create a raised rim on the sides.

For Pie #1, gently arrange a few slices of bacon around the edge. Then add the spinach and the cheese to the inner portion of the shell. Top with an egg and sprinkle with salt and pepper to taste

For Pie #2, gently arrange a piece of ham in the inner portion of the shell. Then add the mushrooms and cheese. Top with an egg and tuck in a few cherry tomato halves. Add salt and pepper to taste.

Return the pies to the oven and bake 15 - 20 minutes until the eggs are cooked the way you like.

The recipe sounds complicated, but trust me, it’s not. The end result looks very fancy without being overly fussy. Also, don’t get caught up in having everything fit perfectly inside that inner portion. I think it looks best when some of the cheese and fillings spill out over the sides.

Chocolate Skillet Cake:

It’s official. Chocolate cake made with a bit of peanut butter and served with a dollop of ice cream just might be the cure for everything.

Friends, this week has been a bear. A pipe in my garage froze and burst, the comparison monster reared its ugly head, and I’m working on a really great, but stressful project (more on that soon … I hope.) And it’s only Tuesday!

I decided that a possible cure for this less-than-epic week was chocolate cake. And since it’s A Year of the Skillet, I figured I’d make it in a skillet.

Thus was born Chocolate Skillet Cake with Peanut Butter and Chocolate Icing. The name alone is enough to put a little smile on your face. Am I right?

This was my first time making a cake in a skillet, so I thoroughly enjoyed the process. I used this recipe from Willow Bird Baking to get me started. Thanks for the inspiration, Julie.

How To Make Chocolate Skillet Cake:

After bringing a few of the ingredients to a boil on the stove, the cake is mixed together right in the skillet. It’s not quite as easy as mixing things in a large bowl (I tend to be a messy baker.), but it was fun to do something different.

After the batter is prepared, into the oven it goes. Once baked and still warm, a layer of delicious chocolate and peanut butter icing gets poured over the top. The original recipe didn’t call for peanut butter, but combined with chocolate, it’s my favorite thing ever, so that was the easiest decision of the week.

Ingredients

Chocolate Icing:
  • 1/4 cup unsated butter
  • 2 tablespoons cocoa
  • 4-5 tablespoons milk - (Add more if needed.)
  • 1/2 cup peanut butter
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla
  • Ice cream for serving - optional

Instructions

  • Begin by preheating the oven to 350 degrees F.
  • Then, in a large bowl, whisk together flour, baking soda, sugar and salt. Set aside.
  • In a 10-inch cast iron skillet, bring the butter, vegetable oil, cocoa powder, and water to a boil. Remove from heat and begin to whisk in the dry ingredients.
  • Next, with a spatula, incorporate the buttermilk, egg, and vanilla until just combined.
  • Bake the cake for 20 - 25 minutes or until a toothpick inserted near the center comes out clean.
  • While the cake begins to cool, prepare the icing. In a saucepan, bring the butter, cocoa, and milk to a boil. Remove the pan from the heat and stir in the peanut butter.
  • Next, add the powdered sugar and vanilla. Mix until smooth. Depending on the consistency, add a the milk, one tablespoon at a time, until the icing is just pourable but not runny. Pour over the warm cake and smooth out with a spatula.
  • Allow the icing to set before serving with vanilla ice cream.

I’m always searching for really good recipes to serve during these cold months before the arrival of spring. I want something fresh, but I still need it to be filling because it’s 7 degrees outside.

This recipe for Bacon, Onion, and Goat Cheese Pasta is just that.

Bacon and Goat Cheese Pasta

I actually found this via Martha Stewart. Since it combines a few of my favorite things (i.e., pasta, bacon, and goat cheese), I knew I had to give it a try.

To be honest with you, I’ve had horrible luck with Martha’s recipes in the past, so I tend to stay away from them. For me, they always look so simple, but when I’m in the process of cooking, things just seem to fall apart.

This recipe seemed (and was) pretty straightforward, so I figured it was worth a try. However, I still ended up changing it a bit to make it more user friendly.

I could eat pasta with a salad and a big ol’ glass of wine everyday, so I really loved this recipe. The flavors are subtle, but they work so nicely together.

Since there are lots of onions, I don’t recommend this dish for date night.- Unless your dating life is like mine, which means it just me and my cats on the couch, with maybe an extra glass of wine.

Also, don’t skip the fresh thyme. It’s so important and will definitely have you thinking and craving spring.

Bacon Onion and Goat Cheese Pasta

Bacon, Onion, and Goat Cheese Pasta

Here's what you will need:

1 pound campanelle
5 ounces thick-sliced bacon, sliced into 1-inch pieces
3 medium red onions, thinly sliced
2 garlic cloves, minced
1 tablespoon fresh thyme leaves, plus more for garnish
Kosher salt and ground pepper to taste
5 ounces soft goat cheese

Begin by cooking the pasta. Before draining, reserve 2 cups of the pasta water; then drain the pasta.

Meanwhile, brown the bacon in a large skillet over medium heat. Remove the bacon pieces to a paper towel-lined plate.

In the pan with the bacon fat, add the onions, garlic, and thyme. (If you feel there is too much bacon fat in the pan, remove some carefully with a paper towel.) Cover the pan and cook, stirring occasionally, until the onions just begin to brown (about 15 minutes). Then uncover and cook until gold brown for an additional 5-10 minutes.

Next, remove the pan from the heat. Add the cooked pasta to the onion mixture. Then add 1 cup of the reserved pasta water and the bacon. Crumble the goat cheese over top. Season to taste with salt and pepper. Toss until combined and the goat cheese is melted. Add more pasta water, if desired.

Garnish with some thyme and serve.

DIY Tassel Garland | Inspired by Charm

This DIY Tassel Garland is easy to make, inexpensive, and add a fun, colorful, and festive touch to any party or celebration!

Today I’m going to tell you how I made the DIY Tassel Garland you saw in the photos from my mom’s 60th birthday party this past weekend.

Although this project will take some time, making a DIY tassel garland is very simple and cost effective. Plus, when your guests find out you actually made the garland, their response will be “What!?!” It’s pretty cool.

I ended up making four of these garlands and scattering them throughout the house to tie everything together. I even hung a mini one in the bathroom. Don’t forget to decorate the bathroom!

The base of these tassels is tissue paper, so you can do any combination of colors to match your event. I purchased most of my tissue paper on Amazon to get the colors I wanted. Be sure to get quality tissue paper. It will make the process much easier. You can also change up your string (I chose a string with a metallic thread from Jo-Ann Fabrics.) and your tape. This shiny gold tape is from Staples, but any sort of decorative washi-style tape would do the trick.

Also, be aware that there is a certain famous craftsy woman who sells a “fringe-cutter.” It’s kind of like a paper cutter, but it’s supposed to create fringe in tissue paper. I’ll save you some money. It doesn’t work. Stick with scissors.

Okay. Now, let’s get crafting.

How to Make a DIY Tassel Garland:

You will need:
tissue paper
scissors
decorative tape
string or twine

Begin with one piece of tissue paper. (One piece of tissue paper will make four tassels.)

Fold it in half lengthwise.

Then, fold in half widthwise.

Fold again widthwise.

Next, cut your fringe starting from the bottom, unfolded side. Cut up to the top leaving about a two inch band that is uncut. Your strips can be as thin or as thick as you’d like.

Unfold once and cut in half from the top of the fold to the end of the fringe.

This will give you three pieces. Unfold them. Two will look like this, ready for the next step.

The other piece will be double the size of the two other pieces. Cut this in half lengthwise. You will now have four sections that are the same size.

Now take one piece and start to roll the uncut center area lengthwise. As you roll, pay attention to the fringe so it doesn’t get tangled.

Once rolled, start to twist the center area until it’s tight. Then fold it in half twisting the side in opposite directions until it make a little loop at the top.

Next, cut a piece of tape (about 1.5 inches long) and wrap it around this section to secure.

Continue making tassels until you have as many as you will need.

You’re then ready to string them up. Cut the desired length of string. Add one tassel at a time and make a simple knot to attach.

Continue adding tassels and knotting them in place. The distance between each tassel is up to you. I found that 3 inches worked well for the number of tassels I had.

After all of your tassels are attached to the string, you’re ready to hang up the garland!

I was so happy that the menu for my mom’s 60th birthday bash turned out just as I’d planned. Other than buying way too much food (a bad habit of mine), everything was delicious and went off without a hitch.

I wanted to serve a classy appetizer that would be quick to make, yet very flavorful. I also wanted it be a food that people were comfortable with. Living in a small town, not everyone’s palette or knowledge of “new” foods is expansive. I think it’s important to know your audience and serve foods they are likely to love.

With all of those criteria in mind, I decided that shrimp was the answer. Not just any shrimp though – Parmesan Garlic Roasted Shrimp.

I figured I could prep the shrimp in the morning and have them on a sheet pan in the fridge, ready to pop in the oven when all the guests arrived. This way the appetizer could be served hot, plus the smell of roasting garlic and Parmesan would get tummies excited for what was about to come.

This recipe is so simple to make and exceptionally delicious. Medium-sized shrimp get tossed in olive oil, spices, Parmesan, and fresh garlic. After a quick visit to the oven, they get splashed with a bit of fresh lemon juice, garnished with parsley, and served with cocktail sauce.

This roasted shrimp is definitely one of those easy snacks that you can serve at almost any gathering. I even like the shrimp on a salad for lunch or dinner. Oh the possibilities!

Let me show you how to make them.

How to Make Parmesan Garlic Roasted Shrimp:

Begin by preheating your oven to 350 degrees F. Coat a baking sheet with oil or nonstick spray.

Place the shrimp in a single layer on the baking. Evenly distribute the olive oil, parmesan, garlic, oregano, and basil. Season with salt and pepper to taste. Toss together with a spoon or your hands.

Place the pan of shrimp in the oven and roast the shrimp until just pink, firm, and cooked through. This should take 7-9 minutes. When done, sprinkle with lemon juice.

60th Birthday Celebration | Inspired by Charm

Friends, I wish I could tell you where last week went. I got into whirlwind party planning mode and could. not. stop. As I explained earlier last week, this past Saturday we celebrated my mom’s birthday at my house. I was clearly reminded that there’s nothing like having a party at your house to get your butt in gear.

In addition to coordinating all the party details (food, decor, etc.). I managed to repaint a few of my kitchen cabinets (and reorganize them), completely clean out my guest-room-turned-junk room, paint the wall above my fireplace in my other guest room, fill about a dozen empty frames, touch up white woodwork throughout the rest of the house, sort through clothes, and about a million other things. In typical “Michael fashion,” I lost sleep, stressed myself out, and managed to spend more money than any human should spend in a week.

However, the party was a huge success. The decor was beautiful, the food was delicious, and most importantly, my mom was pleased.

As I look back, this was definitely one of those moments when I should have realized that you can do anything, but not everything. This was especially true when I thought I’d be able to photograph the event while cooking and hosting. Oops! However, before the guests arrived, I did manage to snap some pictures to show you today. I decided to go with a pink, orange, purple, and gold color scheme. I always like to have a color scheme when planning. It helps with so many of the other decisions, from picking the invitations to the flowers to the decor.

I got tons of flowers for the party. Most of them came from a company called The Bouqs. You can check them out here. In my small town, I don’t have access to a wide selection of beautiful blooms so this company was my savior! Their selection is awesome, the flowers are shipped quickly, and they are stunning (even in the dead of winter in Central PA). I dressed them up in various containers like these white pitchers as well as my purple and gold-dipped mason jars.

I wanted to DIY some of the decorations. With a tassel fringe garland being a popular DIY these day, I opted for that. I figured it would be a great way to tie in the color scheme. To bring in some bling, I tucked in gold fringe in a few locations around the house. Just enough sparkle without being too tacky. I found the fringe at a party store.

One of the biggest decorations, though, was these gold “60” balloons I picked up via Urban Outfitters. I had two sets; one in the dining room and one in the living room. They added great drama and sparkle.

In the dining room, I wanted a fun drink area. Since this was a luncheon, I thought a Mimosa Bar would be perfect! I bought bottles of Prosecco and various fruit juices (orange, grapefruit, cranberry, and pineapple) plus some fresh fruit and berries and arranged it all on a table. People could create their own cocktail, which they seemed to enjoy. I even picked up some sparkling grape juice for the kids. They loved their “champagne.”

The food is the thing I didn’t have much of a chance to photograph. Trying to get it ready for hungry guests and photograph everything was not happening. I wasn’t able to pop out my tripod and ask folks to wait while I snapped shots for my blog. Ha! Anyway, I served up a red chili and a white one. Both were very well received, but people raved about the white chili. I’ll get that recipe on IBC soon. You’re going to love it.

To go along with that, I had a meat, cheese, and bread bar. Guests could make cheese and crackers or sandwiches. I had a variety of mustards and other spreads, olives, crackers, cheese, meat, etc. You get it.

To complement the soup, there were local “famous” rolls with honey butter and a vegetable quinoa salad. A great combination and enough to feed an army.

Finally, I decided to bake the cake for the party – an ombre petal one inspired by this tutorial. Other than taking a really long time, it wasn’t overly complicated and, despite not being a “cake decorator,” I was pleased with how it turned out. It looked almost professional and tasted amazingly delicious. If you want to recreate this, definitely check out this tutorial.

As I’ve told you before, Valentine’s Day is not my favorite holiday. I’m sure that if I wasn’t single, it really wouldn’t be all that bad. Given my current situation, it’s just another day.

This year, however, Valentine’s Day is going to be a special occasion because I’m planning a birthday lunch for my mom who is turning 60. I’m excited about the party, but at the moment I’m also a bit nervous. I talk a lot about stress-free entertaining, and I’m doing my best to keep things that way. Still, stressing out just seems to be in my nature. And, in some weird way, I think all that adrenaline is what fuels my creativity and helps me to get stuff done.

To start off, you make Rice Krispie Treats just as you usually do, but you add in some peanut butter and then sandwich some peanut butter cups in-between. It’s so simple.

I used the little heart shaped peanut butter cups, but you can use regular ones. And because I wanted to add some color, I picked up these x and o sprinkles and added them to the chocolatey layer on top. Obviously, the sprinkles are optional. Without them, the treat will still taste and look just as delicious. Let's whip some up. Peanut Butter Cup Rice Krispie Treats Here's what you will need: 7 cups mini marshmallows 6 tablespoons butter 1/2 cup peanut butter 7 cups Rice Krispie cereal 15 seasonal (or 24 regular) peanut butter cups 2 cups milk chocolate chips 1 tablespoon shortening Sprinkles (optional) Begin by greasing a 9x13-inch pan with butter or cooking spray. Set aside. In a large saucepan, slowly melt the butter over low heat. Once it's melted, add the marshmallows and stir until melted. Then stir in the peanut butter. Lately, my brain has been overflowing with ideas. Recipes I want to try, mini-(and not so mini-) projects that I want to tackle around the house, and things I want to create. I love when I have these floods of creativity. Now, if I could only figure out how to stop time and just create.

Since that’s impossible, I’m doing my best to take good notes and use my time wisely.

Today’s Raspberry Cheesecake Martini is thanks in part to my flood of creativity. I was shoveling snow the other day and somehow got to thinking about Valentine’s Day and cocktails, which led me to visions of martinis and raspberries. Then I imagined a graham cracker crust – and you know where that lead.

I played around with a combination of spirits to create a creamy and luscious martini, something that actually tastes like cheesecake. I think I nailed the combination.

Adding in a layer of raspberry (a.k.a. Chambord Liqueur) really bought this whole creation together and made it oh-so-perfect for the upcoming holiday of love. I kept the Chambord separate so that it could gently swirl into the cocktail, creating a really beautiful affect.

Garnished with a fresh raspberry and graham cracker rim, you’ve got yourself a tasty dessert-inspired cocktail that’s perfect for sipping as you cuddle with your special someone.

Raspberry Cheesecake Martini

2 ounces whipped vodka
1 ounce amaretto (Disaronno)
1 ounce Irish cream liqueur (Baileys)
2 ounces half and half
1 ounce raspberry liqueur (Chambord)
Honey, graham cracker crumbs, and raspberry for garnish
Ice

Begin with two shallow dishes or plates. To one, add a teaspoon of honey. To the other, add the graham cracker crumbs. Rim the edge of the martini glass first in the honey and then in the graham cracker crumbs. Add a raspberry to the glass and then pour in the raspberry liqueur. Set aside.

In a cocktail shaker filled with ice, combine the vodka, amaretto, Irish cream, and half and half. Shake vigorously. Slowly strain into your prepared martini glass, letting the Chambord loosely swirl into the mixture.

As I mentioned last week, this year I’m honing my skillet skills by researching and creating recipes that can be made in a skillet. I had so much fun using my skillet for the first time that I couldn’t wait to get back in the kitchen and try another skillet recipe: Skillet Reuben Dip recipe!

One of my all-time favorite sandwiches is the Reuben. When I was growing up, my mom used to make them every now and then for dinner. Along with BLTs, they were a meal I always looked forward to.

Nowadays, here in St. Marys where I live, Reuben sandwiches are on the menu at most restaurants. If I’m ever unsure of what to eat, a classic Reuben will usually do the trick.

How to Make Skillet Reuben Dip:

I’ve been seeing a lot of Reuben-inspired dips on the Internet lately so I thought I would give the recipe a try with a skillet twist.

The ingredients of this Skillet Reuben Dip are the same as for the sandwich: pastrami (or corned beef) sauerkraut, Swiss cheese, and thousand island dressing. However, this time, they are all mixed together with cream cheese (to make it extra decadent).

I paired the dip with rye cocktail bread that I toasted in the oven with a little olive oil, salt, and pepper.

This Skillet Reuben Dip recipe is all the things you love about the classic reuben sandwich, but in dip form!

Ingredients

  • 1 package (8 ounce) cream cheese, softened
  • 1 cup sauerkraut
  • 3/4 cup thousand island dressing
  • 1/2 pound deli pastrami - or corned beef, chopped
  • 8 ounces Swiss cheese - shredded
  • 1 loaf rye cocktail bread
  • Olive oil for bread
  • Salt and pepper to taste

Instructions

  • Begin by preheating your oven to 400 degrees F.
  • Arrange the rye cocktail bread in a single layer on a baking sheet. Brush with olive oil, then sprinkle with salt and freshly cracked pepper. Bake for about 10 minutes or until the bread starts to brown and become crisp. Set aside
  • In a large bowl, cream together the cream cheese, sauerkraut, thousand island dressing, pastrami, and Swiss cheese by hand or using a mixer. Add salt and pepper to taste.
  • Spoon the mixture into a 10-inch skillet (or any oven safe baking dish). Bake for 10 minutes. Remove from the oven and stir, then return the mixture to the oven for an additional 10 minutes or until bubbly. For a little browning on top of the dip, set your oven to broil. Watch carefully and remove when browned to your liking.
  • Serve warm with the toasted bread.

I have to tell you, one of the things I’ve come to love so much about IBC is that I don’t really have a specific focus. Over the years I’ve struggled with trying to put this blog in a particular category. Is it a decorating blog? Is it a baking blog? Cooking? DIY? However, as time has gone by, I’ve come to embrace that IBC is a little bit of everything. Clearly, it wasn’t designed to fit in any box. I’m totally cool with that, and I hope you all are, too.

I make that point because I’ve been posting a lot of recipes lately. Sometimes when my brain is cluttered or overwhelmed, I turn to sharing recipes because it’s a task / post that has a clear beginning and end. Plus, there’s usually some sort of base recipe involved somewhere, making it a bit easier to follow along. Anyway, I’m not sure why I’m telling you all of this, but there you have it.

A couple weeks ago someone asked what I put on my dining room table this time of year. I had planned to show various options, but have yet to do that. So I figured I’d just show you what was there now. It’s pretty simple and a little random, but it works for me.

Inexpensive flowers are a must for me during the winter. I’m not sure what this particular variety is, but I can get a bouquet of them at the store for $5, and they seem to last forever. I also like using trays on my dining room table because they keep things organized and grounded. Plus, when I need the table, removing the tray of decorations is super simple. In case you were wondering, the runner is from HomeGoods, the copper accessories are from H&M’s home line, and the plates are from Target.

I finally got some of my vacation / cruise pictures printed out, and I used a few of them in my entryway for a fun burst of color. I should note that these pictures where taken with my iPhone, which I think is just amazing. I get my pictures printed via the online 1-hour service from Walmart, and the quality is typically pretty fantastic and true to what I’m seeing on my computer. Even getting these iPhone images printed on an 8×10, the quality is still pretty great.

I’ve also been buying orchids (here and here, too). I can’t get them to re-bloom to save my life, but investing $10-12 for a plant / flower that typically lasts two months seems like a pretty good deal to me. Nothing beats a live orchid.

I gave my living room gallery wall a quick update with two new pictures. You may remember that when I first hung these frames, I incorporated two prints that weren’t mine. I call this my wanderlust gallery wall, and the goal is to only use photographs from my travels.

I was fortunate enough to visit two tropical destinations toward the end of last year, so I used those photos to make this collection 100% my work. This was definitely one of my favor projects. I love traveling, and the gallery wall allows me to relive those memories. Plus, I can easily update the pictures when new or better ones come along.

I’m convinced that you can dip anything in chocolate and instantly make it taste more delicious and look expertly styled and totally fancy. Don’t believe me? Feel free to prove me wrong. And while it might take a bit more time, it’s really not hard to do.

Today, I’m combining two flavors that live harmoniously together in my heart and my tummy – chocolate and peanut butter.

A basic recipe for delicious peanut butter cookies gets upgraded with a quick dip in a warm milk chocolate bath followed by a turn in crushed peanuts or chocolate sprinkles. In all honesty, I wanted to dip the entire cookie in chocolate but that would have been quite messy and not as pretty.

Okay, I’ve tempted you enough. Let’s take a look at the recipe.

Chocolate-Dipped Peanut Butter Cookies | Inspired by Charm

Chocolate-Dipped Peanut Butter Cookies

makes about 4 dozen cookies

Here's what you will need:
1 cup peanut butter
1/2 cup unsalted butter, softened
1/2 cup shortening
1 cup granulated sugar
1 cup brown sugar, packed
1 teaspoon baking soda
1 teaspoon baking powder
2 eggs
1 teaspoon vanilla
2 1/2 cups all-purpose flour
Additional granulated sugar (to roll the cookies in)

For the chocolate dip
3 cups chocolate chips (milk chocolate, semi-sweet, or a combination of the two)
1 tablespoon shortening
Sprinkles or crushed peanuts or both

In the bowl of a stand mixer, using the paddle attachment, cream together the peanut butter, butter, and shortening for about one minute. Next, add 1 cup granulated sugar, brown sugar, baking soda, and baking powder. Beat until combined. Scrape the sides of the bowl when necessary. Beat in the eggs and vanilla. Then slowly add the flour and mix until just combined. Cover and chill the dough for an hour.

Preheat the oven to 375 degrees F. Shape the dough into 1 1/4-inch balls. Roll in graduated sugar to coat. Place balls 2 inches apart onto an ungreased cookie sheet. Flatten with a fork to create groves along the top of the cookie. Bake for 7 to 9 minutes or until the cookies just begin to brown. Let cool on the cookie sheet for 1 minute; then transfer to a wire rack and let cool.

Once the cookies are cool, use a double boiler to melt the chips and shortening until smooth.

Line your countertop with wax paper. Place sprinkles and crushed peanuts in bowls. Dip half of each cookie in the chocolate; then roll the dipped edge into the sprinkles or peanuts or both. Set on wax paper to cool.

Skillet Cookie Cake | Inspired by Charm #ayearoftheskillet

I’d like to report that my efforts to live a healthier lifestyle (i.e., smarter diet and more exercise) are already showing some results. I hate to speak too soon, but I’ve managed to achieve 15% of my weight loss goal, and I’m generally feeling more energized. Last weekend I even managed to jog 17 miles in two days. Like some of you, it drives me insane when people talk about healthy eating and weight loss, so I promise not to update you too often. However, I thought given the fact that I’m posting an uberly delicious dessert today, it was important to note my progress.

I wanted to make today’s recipe for two reasons. First, as I mentioned last week, I started an unofficial series here on IBC called Cookbook Cooking. I’m finally putting my dozens of cookbooks to use and actually making recipes from them. (Crazy idea! Actually USING cookbooks. Groundbreaking!) Secondly, I wanted to use this recipe as an introduction to a new, and very official series here on IBC.

For the past two years, I’ve challenged myself to conquer a cooking or baking skill. Year one, I tackled yeast and made a variety of homemade breads – A Year of Yeast. Last year was all about perfecting my pie making skills – A Year of Pie. I struggled on the topic for this year, but this morning it hit me in the face like a frying pan. Literally. I’ve decided that this will be A Year of the Skillet.

Not long ago my brother gave me a cast iron skillet for Christmas. It’s my first skillet of this type. Ever since I got it, I’ve been so excited to try different recipes, acquire different-sized skillets, figure out how to take care of them, etc. Since I’m new to cast iron skillet cooking, I thought I’d take you on the journey with me. Even though I’m starting out with a sweet recipe, I think this series will give me lots of opportunities to also experiment with more savory dishes – another thing I lack experience in.

Skillet Cookie Cake | Inspired by Charm #ayearoftheskillet

I was inspired by her recipe for Under-Baked Chocolate Chip Skillet Cake and thought I would give it a try. It’s a little treat to celebrate the success of my new healthy lifestyle, a lesson in Cookbook Cooking, and an introduction to my newest series all rolled into one. How’s that for multitasking!?

I obviously gave my version – Skillet Cookie Cake some IBC flair. Instead of just chocolate chips, I used Valentine’s Day M&Ms for festive color. I also love the combination of peanut butter and chocolate so I mixed in peanut butter chips and peanut butter-filled chocolate chips. Yes, they do exist and are delish!

I love this recipe because you can mix in whatever cookie additions you love the most. It’s also a really fun and unique way to serve a cookie. PLUS, you can even add a big scoop of vanilla ice cream, and it makes total sense.

Skillet Cookie Cake | Inspired by Charm #ayearoftheskillet

Skillet Cookie Cake

Here's what you will need:
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
3/4 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg
1 large egg yolk
2 teaspoons vanilla extract
1/2 cup milk chocolate M&Ms*
1/2 cup peanut butter chips*
1/2 cup peanut butter-filled chocolate chips*
Ice cream (optional, but highly recommended)

*You can use whatever chips, nuts, etc. that you like. I recommend about 1 1/2 cups total. I also sprinkled a few on top of the cookie before baking so I could easily tell what was inside the cookie.

Begin by placing an oven rack in the upper third of the oven. Preheat the oven to 350 degrees F. Grease and flour a 10-inch ovenproof skillet.

Then, in a medium-size bowl, whisk together the flour, baking soda, and salt.

In the bowl of an electric mixer using the paddle attachment, cream together the butter and sugars on medium speed until light and fluffy, about 3 - 4 minutes. Reduce the speed to low; then add the egg, followed by the egg yolk and vanilla. Beat well. Add the flour mixture and beat on low until just combined.

Using a spatula, fold in the chocolate chips until just combined. Add the batter to the prepared pan and smooth out the top. Add a few more of your chips to the top of the batter, if desired.

Bake until the cookie is lightly browned on the outside, but still slightly under-cooked in the center. This will take about 20 - 22 minutes. Allow the cookie to cool for 10 - 15 minutes before serving.

Slice up and serve with a scoop of vanilla ice cream.

Not too challenging, right? The resulting skillet cookie cake is soft and slightly underdone on the inside, but crisp and firm on the outside. I also love that this yummy treat can be whipped together quickly with things that most of us keep in our pantries and fridges. This Cinnamon Sour Cream Bread is my favorite quick bread recipe. It’s a sweet bread with a cinnamon swirl through the middle. It makes the perfect breakfast treat or afternoon sweet.

I can’t believe that after blogging for more than six years, I have yet to share this Cinnamon Sour Cream Bread recipe with you. It’s not fancy, but it’s hands down one of my favorites.

It’s a sweet quick bread known to my family as sour cream bread. I added the word cinnamon to create Cinnamon Sour Cream Bread because it sounds a little tastier.

I should also mention that it’s more like a cake than a bread. Friends, I didn’t name it. Don’t blame me.

My mom has been baking this bread for as long as I can remember. It has become comfort food to me. One bite and I’m transported back to my youth.

In fact, it was one of those things she would send with me back to college. If given the chance, I could eat a whole loaf in one sitting.

I think the first time I made this recipe myself was when I owned my bed and breakfast. I had my mom write the recipe down for me, and this is what I got:

It’s that simple, no actual directions are required. Now, with some baking skills under my belt, I’ve adjusted the recipe slightly to make it even better.

How to Make Sour Cream Bread:

If you look at the ingredient list, it’s mostly pantry staples. However, the resulting loaf has a wonderful flavor and cinnamony goodness that I just love. When I was younger, I would eat around the cinnamon part and save that for last.

Another thing I love about this bread is that it’s dense. The outside crust is firm and the inside is dense, but still really light and moist. I hope that makes sense.

Now, If you don’t like that thicker, firmer crust, this may not be for you. But I can’t get enough. In fact, my favorite pieces are the heels. Just writing this has me craving a piece. Let me smear a little butter on top, grab a cup of coffee, and I’ll be set.

Seriously, I can’t stop gushing. However, I will stop my fingers from typing on and on and just give you the recipe.

Cinnamon Sour Cream Bread | Inspired by Charm

Cinnamon Sour Cream Bread

Here's what you will need:

Cinnamon swirl:
3 tablespoons flour
4 tablespoons sugar
1 1/2 teaspoons cinnamon

Bread:
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup sugar
2 eggs
1  container (8 ounce) sour cream
1 teaspoon vanilla

Topping:
1 tablespoon sugar
1/4 teaspoon cinnamon

Let's get baking:

Begin by preheating your oven to 350 degrees F. Grease and flour a 9x5-inch loaf pan; set aside.

In a small bowl, prepare the cinnamon swirl by whisking together the flour, sugar, and cinnamon. Set aside.

Then, for the bread, in a large bowl whisk together the flour, baking soda, baking powder, and salt.

In a medium size bowl, with a handheld (or electric mixer) beat the softened butter until light and airy, about three minutes. Add the sugar and beat again until combined, about four minutes. Next, add the eggs one at a time, incorporating the first one before adding the second. Finally, beat in sour cream and the vanilla.

Now gently incorporate the wet ingredients into the dry. Mix until just combined, being careful not to overmix. The final mixture will be more the consistency of a dough rather than runny like a cake batter.

Spread half of the mixture into the bottom of your greased and floured pan. Then evenly sprinkle your prepared cinnamon swirl over the top. Spread the remaining dough on top of the cinnamon swirl layer.

Finally, in a small bowl, mix together the sugar and cinnamon for the topping. Sprinkle this evenly over the top of the loaf.

Bake at 350 degrees F for 60-65 minutes. The loaf is done when a toothpick (or wood skewer) inserted near the center comes out clean.

Allow to cool in the pan for about 20 minutes. Gently run a butter knife around the edge of the pan to loosen the loaf. Remove from the pan to finish cooling.

The Little Coat Rack that Could | Inspired by Charm

I’m back today with a quick and easy, yet super functional DIY project. You might remember that about a year ago I gave my small entryway a dose of color and style. Today, I’m returning to the space to add a bit more style, plus a dose of utility.

As you probably know, I’m part of the Lowe’s Creative Blogging Team. (I’ve been a pretty terrible blogger lately, and I’m behind on a few posts. In other words, you can expect more DIY posts in the near future. However, feeling my mojo slowly returning, I’m excited and inspired to take on some much-needed home projects.) This month we were given free range to tackle any project we wanted, so I decided to focus on the organizational side of things.

As you can see in the picture above, I added a super fancy coat rack to my space. And by super fancy, I mean that I attached wood to the wall and then coat hooks to the wood.

So simple, but the project turned out really chic, and it’s exactly what I wanted and needed for this space. Let me show you how it came together.

First,I went to Lowe’s and picked up several 1×4″ pine boards. Then, I searched and searched for the perfect coat hook. When I came across the Sumner Street Garment Hook, I knew I had a winner. I love the brass finish, and the overall style works well with the rest of my house.

Next, I used a miter saw to cut the wood to fit the space. Then, I attached the wood pieces to the wall. To do this, I used six screws on each board. I also pre-drilled the holes to prevent the wood from splitting.

Once that was complete, I filled the holes with spackling and painted the board the same color and sheen as my trim work.

When the paint was dry, I was ready to add the hooks. After some careful measuring and leveling, I marked all the holes for the screws, pre-drilled them, and attached the hooks.

Clearly, as a single guy, I don’t need twelve hooks. But I wanted something to visually fill the space without having to put up a bunch of decorations. Plus, I love brass, so the more the merrier!

Overall, I’m thrilled with the way things turned out. I’m always amazed at how such a simple project, that takes very little hands-on time, can finish off a space. These small details are certainly helping to transform my house into a home. And best of all, now when people come to visit, instead of just throwing their coats on a chair, they have a place to hang them. I love this project for that reason alone.

Oven Fries | Inspired by Charm

I’m unofficially starting a new series here on IBC. As you probably know, I love me a good cookbook. When I buy one, I tend to flip through the pages, wipe the drool off my mouth, and then tuck the book on a shelf to collect dust. (Thanks to the internet, who really needs a cookbook these days.)

Well, I’m changing all that. I’m dusting off my cookbooks, putting them back to work, and sharing my progress with you. Thus begins, Cookbook Cooking.

I’m starting off this series with one of my favorite cookbooks from Tyler Florence. Tyler’s Ultimate. (Yes, it’s autographed!) It’s a collection of really simple, yet flavor-packed and beautiful foods. This book is kind of the male take on Ina Garten. It’s even laid out similarly to her book.

Today we are making Oven Fries. I really love this recipe because it’s semi-healthy- the fries are baked, not fried. But, feeling a little gluttonous, I decided to inject a bit more fat and flavor and pair it up with a gorgonzola dipping sauce. The recipe for the sauce is lightly adapted from this recipe from Bobby Flay.

The combination of the two is what I like to call heaven in my mouth. Gorgonzola (a more subtle, creamier version of blue cheese) is my bestie. Put it on anything and I’m in.

Obviously, these would be delicious paired up with a steak or burger, but you could also serve a small portion with a salad for ‘a healthy dinner with a side of indulgence.” Figure friendly! Everything in moderation.

Let’s whip some up.

Oven Fries

Here's what you will need:

Oven Fries:
2 russet potatoes
1/4 cup extra virgin olive oil
Kosher salt
2 tablespoons chopped parsley leaves
1/4 cup freshly grated Parmigiano-Reggiano (Parmesan cheese)

Dipping Sauce:
1 tablespoon unsalted butter
1 small onion, finely diced (about 1/2 cup)
2 tablespoons all-purpose flour
1 cup milk
4 ounces Gorgonzola cheese, crumbled
1/4 teaspoon cayenne pepper
Kosher salt

For the fries, begin by preheating the oven to 425 degrees F.

Next, cut your potatoes in half lengthwise. Then cut those in half again. Cut each of those piece into fourths to create 16 wedges. Place wedges in a large bowl and set aside.

Next, preheat your baking sheet in the hot oven for at least 5 minutes. This will help keep the fries from sticking to the pan.

While the baking sheet is heating, drizzle your wedges with the olive oil and about 3/4 teaspoon kosher salt. Mix well. Then dump the potatoes onto your preheated baking sheet and spread out in a single layer. Roast for 30 to 35 minutes. Gently shake the pan every now and then, until the potatoes are cooked through and are brown and crispy. Finally, toss the fries in a big bowl with the parsley and cheese.

For the dipping sauce, melt the butter in a small sauce pan. Add the onion and cook over medium-high until the onion is softened, about 7 minutes. Next, whisk in the flour and cook for another minute. Slowly swish in the milk. Continue cooking over moderate heat while whisking until thickened, about 5 more minutes. Remove from heat and whisk in the Gorgonzola cheese. Season with cayenne pepper and salt. Serve warm.

Master Bedroom Update | Inspired by Charm

It’s been a while since I’ve talked about Bedroom, so I thought I’d pop in today with a little Master Bedroom update. Last night on Instagram I shared a sneak peek and was so excited to see how many of you liked how the room is evolving.

I’ve definitely made some progress since you last saw this space, but there is still much to be done. First, we’ll talk about what’s new.

Most notably, I got a new bed frame! It’s the Upholstered Wingback Bed in Navy from AllModern. Picking out furniture is so difficult for me sometimes. Buying a whole bed is kind of a big deal. I was immensely pleased when this arrived and I got it set up. It works perfectly in the space. The color, texture, and tufting are exactly what I wanted. The frame is also very sturdy, so the whole bed doesn’t move when I roll over.

Next came the bed linens. Shortly after I picked out the bed, I found these Morgan shams and duvet cover at Pottery Barn. I knew I wanted white with a little something. The pop of blue in the piping ended up working so nicely with the bed.

The throw was a gift from my mom (from HomeGoods) that I had intended to use in my living room. However, after trying out a few options in this space, I really liked how the throw looked. The color was a match, and it added such great texture to crisp linens.

Over the holidays West Elm was having a big sale, and I had some Design Dollars saved up, so on a whim I ended up purchasing two night stands (this one and this one). Again, I loved how they work in the space. I opted for two different designs but in the same style / wood to keep things interesting yet uniform.

I also got a big rug. This particular one is the Sibley Jute Rug from Birch Lane. My hardwood floors aren’t in the best shape, so I wanted something that covered most of the floor and added much-needed texture. This did the trick!

Finally. I threw around a bunch of accessories. Over the holidays I was frustrated with myself for not making much progress in this room, and I needed it to look somewhat presentable so I didn’t look like an animal lived here when people visited.

I got the green lamps from HomeGoods over a year ago. They were actually part of the Jonathan Adler Happy Chic collection that was sold at JCPenney. I bought them for another space, but they look pretty great in here, so for now they will stay.

I also have this clear acrylic table chilling in my room so I added a lamp, a chair, and an orchid. I also awkwardly hung this ocean photo on the wall. I’m not sure why I hung it off-center, but at the time it made complete sense. Now, I’m not so sure.

Last, but certainly not least, I hung a gold unicorn over my bed. Because, doesn’t every thirty-something man have a gold unicorn bust over his bed? Hello! It was from Pottery Barn Teen. Of course.

At any rate, the space IS coming together. I just need to get some art on the walls and jazz up the accessories. I’m also thinking about a small cabinet for the wall opposite the bed. I’m toying around with putting a TV in my room, so that’s where it would go. TBD, friends.

Since I have a new goal and diet for the new year, my eyes are always open for health yet still flavor-packed recipes. This past weekend, when I made my trek to Target, I also stopped at one of my other favorite places, Trader Joe’s. Walking through the aisles, I stumbled upon some naan. In case you’re not familiar with naan, it’s basically an Asian oven-baked flatbread.

Anyway, when I saw the naan, it reminded me of a recipe I’ve been wanting to try since tasting it at an event about a year ago. The recipe is sort of a healthier version of pizza.

Instead of using tomato sauce, lots of cheese, and pepperoni, the naan gets topped with hummus, olives, tomatoes, onions, and some freshly grated Parmesan cheese. Those are definitely some of my favorite things. They add wonderful flavor to this recipe.

Something I especially like about this recipe is that you can make just enough for a single meal or you could create a bunch as party appetizers. One recipe, two uses. Love that!

I also like that the toppings are flexible. This is a great way to use those extra veggies or you could even add chicken for some extra protein. And, in traditional IBC fashion, these are SO easy to make. Let me show you.

Mediterranean Flatbread

2 pieces naan flatbread
1/2 cup red pepper hummus
1/2 cup grape tomatoes, sliced
1/4 cup Kalamata olives, roughly chopped
1/4 cup sliced green onions
1/4 cup Parmesan cheese, freshly grated

Begin by preheating the oven to 425 degrees F. Then spray a baking pan with cooking spray.

Place both naan pieces on the pan. Spread each with about 1/4 cup hummus (depending on the size of your naan, you made need more or less. Then top with tomatoes, olives, onions, and cheese.

Bake 8 to 12 minutes until the crust is crisp and the cheese is melted. Slice and serve.
