If you’ve been following along with my Tuesday Tunes series, you know how much l love singer-songwriter music. The other day I came across an acoustic mashup of Justin Bieber’s “Love Yourself” and Selena Gomez’s “Can’t Keep My Hands to Myself.” Now, I do like me some Selena Gomez, but I’ve never been a Belieber. (That’s what he calls his fans, right?) However, some of his new tunes are pretty catchy, and I can’t stop myself from singing along with them.
Anyway, inspired by this mashup of tunes, I decided to create a playlist dedicated to acoustic covers. I’m calling it: Cover, Girl. (You have to say it with a bit of sass.) It’s a collection of some of my favorite songs, and a few new tunes, that have been covered in that folk-music, singer-songwriter style that I love.
This is a playlist that’s perfect for a dinner party or just relaxing on the porch with a cold one. It’s easy, chill, and happy.

This Black-Eyed Susan Cocktail is the official drink of the Preakness. There’s no need to stop celebrating after the Kentucky Derby – cheers with this bright and citrusy cocktail.
However, did you know that the Preakness (another race which takes place two weeks after the Kentucky Derby) also has an official drink? Well, it certainly does, and it’s called the Black-Eyed Susan.
In the spirit of the Derby, which is happening this weekend, I thought it would be fitting to show you how to make the Black-Eyed Susan Cocktail.
To be honest, I’m not a big fan of bourbon. (Bourbon is the alcohol used in a Mint Julep.)
I’m trying hard to love it, but it hasn’t stuck yet. So, for those of you like me, the Black Eyed Susan, could be a nice beverage to enjoy during the Derby so you don’t feel as guilty passing on the Mint Juleps.
How to Make a Black-Eyed Susan Cocktail:
After a bit of research, I found several variations of this cocktail online. It seems to have changed quite a bit over the years. Even the Preakness itself has changed the recipe. No matter how you make it though, it’s a bright and citrusy cocktail you’ll enjoy sip after sip.
All of you probably know how much I like St. Germain, so my variation includes it. With a combination of pineapple juice, freshly squeezed orange juice, and vodka, this is a refreshing cocktail that’s worth a shake.
Traditionally, a Black-Eyed Susan Cocktail is garnished with a citrus wedge and a fresh cherry. I couldn’t find any fresh cherries in my locale, so I used my DIY Horse Cocktail Stirrers. I think they look perfect in any drink. You can learn how to make them here.
Now, let’s shake up this cocktail.

This weekend I’m off to the Derby! Yep, I was invited down to Louisville for the 147th Kentucky Derby. Of all the opportunities that IBC has brought me, I never dreamed that going to the Derby would be one of them. I’m both excited and humbled to be going. I’ll be sharing things on Instagram and Snapchat (@inspiredbycharm) throughout the weekend, so feel free to follow along.
To get ready for the weekend, I thought I’d post a couple simple Derby Day ideas here on IBC. First up are these DIY Horse Drink Stirrers.
In case you didn’t know, the Kentucky Derby is an annual horse race (that lasts about 2 minutes) at Churchill Downs. This event has birthed lots of traditions, including bright and colorful outfits, outlandish hats, and the mint julep.
While the mint julep is probably the most well-known derby drink, there are several other libations to help celebrate the event. I thought it’d be fun and fitting to create coordinating cocktail couture to embellish your derby drink of your choice.
I spotted some horse drink stirrers for sale online. Instead of buying a set, I decided to make my own version. Say hello to my DIY Horse Drink Stirrers.
Other than a fresh sprig of mint, there’s nothing else I’d rather have in my glass while watching the race and cheering on the horses. In fact, I plan to sneak these into my luggage and pop them into my drinks at the derby. Too fun, right?
And as you might have guessed, they are simple to make. Let me show you.
Begin by drilling a hole in the bottom of your plastic horse. (I found my horses here.) It’s best to use a grip or vise to hold the horse while drilling instead of just holding the horse in your hand. Safety first.
You only need to drill about 1/4 of the way into the horse. That will be deep enough to secure the drink stirrer.
With the horses drilled, coat them evenly with gold spray paint. (If you anticipate that the horse will come in contact with your drink, use a food safe spray paint.) I used this gold spray paint which is my favorite gold.
When the horses are dry, add a bit of E6000 glue to the top of your plastic drink stirrers and insert one into each of the pre-drilled holes.
Allow the glue to dry completely, and your Horse Drink Stirrers are ready to go.
Too perfect, right?
Naturally, you can use any combination of colors to create your stirrers. However, when I have the chance to paint something gold, you know I’m going to take it.
Plus, I felt that the combination of gold with the clear stirrers was classic and would match well with any cocktail. What do you think? I also love the mix of metals with my copper mint julep glasses.
Even if you aren’t watching the derby this weekend, these DIY drink stirrers can make any party a bit more fun. Get creative and use different animals like dinosaurs, unicorns, or cats. Crazy Cat Lady party? Um, yes please!

These Lemon Curd Cheesecake Tarts are a delicious and easy dessert recipe idea everyone is going to love!
Lemon Curd Cheesecake Tarts
Lemon is one of my favorite flavors this time of year. Whether it’s added to salad dressing, water, a cocktail, or a dessert, I can’t seem to get enough of the bright, citrus taste. It could be because the light and clean feeling that comes with spring is mirrored in the flavor of lemons. (Or maybe I’m just weird.)
That’s why lemons are the inspiration for the recipe I’m sharing today: Lemon Curd Cheesecake Tarts. I thought about making a classic lemon bar, but decided that was a little boring. Plus, I just picked up some of these cute tart pans and needed to put them to use. So lemon tarts won out.

If you have been following along during the past couple months, you know I’ve been sharing recipes that have inspired joy and helped me to #ShareTheJoy. While cooking and baking are often therapeutic for me, what I love even more than my time in the kitchen is being able to gift my treats to friends and family. I’m a giver by nature. If we are tight, you can expect me to give / send you things. I’m not doing it because I want something in return, I just like to give. In truth, I think that I also like to receive (not so much receiving, just being thought of), so if I have the opportunity to give that feeling to someone else, I’m game.
And although store bought gifts can be awesome, there’s something sublime about the homemade. The act of stirring in a little love and kindness makes the gift that much sweeter.
So, even though my official #SharetheJoy missions with my friends over at Reddi-wip end today, sharing joy is an integral part of my life. I hope you will also take a moment to soak up the joy around you, and then pass it along.
With plenty of lemons, lots of joy, and a can of Reddi-wip on hand, let’s bake.
How To Make Lemon Curd Cheesecake Tarts:
Since this recipe is pretty self-explanatory, I’m going to keep my description brief However, I did want to mention a few things before I give you the recipe.
First, this recipe requires you to make lemon curd. Lemon curd can be kind of tricky to make because if you’re not paying attention you can inadvertantly scramble the egg. To prevent that, just keep the heat on low and constantly whisk. Also, once your lemon curd is cooked, you can run it through a sieve to eliminate any lumps. #ProTip
I’m using little tart pans because I just bought them and they are super cute. If you don’t have tart pans or if you prefer, you can use an 8×8-inch pan.
When serving, you can leave the tarts in the molds or pop them out. They come out of the molds pretty easily. All you do is invert them and squeeze very gently around the sides. Then tap the bottom, and they should fall right out. Just be sure to have your hand underneath to catch them.
These tarts are super yummy and a great spring dessert. The cheesecake and the tart lemon flavor are a match made in heaven. I also love the crust. It is soft and has a nice crumbly texture. Perfection.

Lemon Curd Cheesecake Tart Recipe:
Lemon Curd Cheesecake Tarts
Here's what you will need:
Lemon Curd
1 teaspoon lemon zest
3 tablespoons lemon juice
3 tablespoons sugar
1 large egg
2 tablespoons unsalted butter, cut into small pieces
Tart Crust
1 1/2 cup all purpose flour
1/8 teaspoon salt
1/2 teaspoon cinnamon
6 tablespoons unsalted butter, melted
1/4 cup sugar
1 teaspoon vanilla extract
Cheesecake
6 ounces cream cheese, softened
1/4 cup plain Greek yogurt
1/2 cup sugar
pinch of salt
1 teaspoon vanilla extract
1 large egg
Reddi-wip and sliced lemon for garnish
Begin by making the curd. In a small sauce pan, whisk together the lemon zest, lemon juice, sugar, and egg. Cook over low heat, whisking continually, until slightly thickened. Then, add the butter a piece at a time while constantly whisking. Wait until one piece of butter is melted before adding another. Continue whisking until the curd is smooth and thickened. (It should coat the back of a spoon.)
Strain with a fine mesh sieve by pushing the curd through the sieve with a spatula. Transfer to a bowl and press a piece of plastic wrap directly onto the surface of the curd. Chill until cold.
In the meantime, prepare your tart crust. Begin by preheating your oven to 350 degrees F. Spray 6 (3-inch) tart pans with baking spray. Set aside. In a small bowl, whisk together the flour, salt, and cinnamon. In a medium bowl, combine the melted butter, sugar, and vanilla. Add the flour mixture and fold until incorporated. Divide the batter evenly among the tart pans.
Using your fingers, press the dough into the bottom and sides of each pan. Pierce the dough with a fork. Bake the crust for about 10 minutes or until set. Transfer to a wire rack to cool.
For the filling, add the cream cheese, Greek yogurt, and sugar to a bowl. Mix with an electric mixer until smooth. Then add the salt, vanilla, and egg. Mix again until smooth. Spoon the cream cheese mixture into the tart pans until each is about 4/5 full.
Add the lemon curd to a plastic piping bag (or plastic baggie with the corner cut off) and pipe small dots onto the cream cheese filling. Swirl together with a toothpick or wood skewer. Gently tap tart pans to remove any air bubbles.
Bake for 25-30 minutes or until the center is set. Remove from the oven and cool completely on a wire rack. Cover and chill in the refrigerator until you're ready to serve. Garnish with a whoosh of Reddi-wip and a slice of lemon.

Well friends, we did it! Today we’re wrapping up our festive, tasty, and colorful Cinco de Mayo celebration. If you missed anything along the way, I recommend starting here, or you can visit all the party links at the end of this post.
If you’ve been following along, you probably spotted my Mini Piñata Boxes. I created them to serve a few entertaining purposes. First, they are colorful decor for the table. In bright bold blues, they instantly make things look festive. Secondly, used at each place setting, they can also double as place card holders. Finally, they make memorable party favors that guests can take home.
Packed with candy (or in this case, chocolate), like a traditional piñata, each little box is a special way for your guests to remember and continue the party at home. Besides, who wouldn’t enjoy a fringe crepe paper box filled with chocolates. Am I right?
I also love that these are homemade. While they do require some time to create, they quickly come together while binging on your new favorite show. Netflix and chill? No. How about Netflix and craft? Yes!
Having a homemade element as part of your entertaining decor can make your party unique. It’s certainly a detail that your guests will remember.
Let me walk you through the process of making these piñatas.
You will need the following:
Paper mache boxes
Crepe paper streamers
White glue
Scissors
Twine
Tape
Tissue paper
Chocolates (or candy)
Begin by fringing your crepe paper streamers. You can stack three or four rows of streamers together to make this go a bit faster. Your cuts should go about 3/4 of the way up the streamer. You’ll also need some narrower streamers. To create these, cut the regular streamer in half lengthwise and then fringe.
Once your streamers are fringed, start with the bottom of the box. Glue on a piece of streamer that hasn’t been fringed. Then directly on top of that, glue on a piece of the fringed streamer. This will ensure that you can’t see the brown box through the fringe.
Continue covering the bottom of the box by gluing on fringed streamers. Each row should start about 1/2 inch up from the previous row.
The final row of fringed streamers should be one of the narrower strips you created.
When the bottom is covered, trim off any excess to create a clean edge around the bottom.
Next, add the fringed streamer to the sides of the box working in the same fashion. First, glue on a streamer that hasn’t been fringed. Then directly on top of that, glue on a piece of fringe streamer.
Continue adding the fringed streamers until you reach the top edge.
The lid is covered in the same way. However, before adding the streamers, create a looped hanger on the top of the box with a piece of tape and twine,
Then fringe around it the same way you did the bottom of the box.
Finally, glue on the fringe streamers around the rim of the lid starting at the bottom and working up. Finish with a narrower strip of streamers.
Once the glue dries, place coordinating tissue paper in the box, fill the box with candy, and pop on the lid.
With that, your Mini Piñata Box is complete.
I chose to do a gradient effect with four different shades of blue crepe paper streamers. I made four boxes. To make each one different, I varied the color I started with for each box. You can do yours the same or create your own combination of colors and effects.
While these are great for a Cinco de Mayo celebration, they could certainly add a festive touch to any party. (Are the ideas already flowing?)

Mini Margarita Cheesecakes:
Moving on to my favorite part of any celebration, it’s time for dessert! In case you’ve just come to the fiesta, IBC is celebrating Cinco de Mayo all this week! Click here for all of my Cinco de Mayo recipes and party ideas. Today, we are making these Mini Margarita Cheesecakes!
Having had cocktails and dinner, we’re now ready for dessert.
Inspired by the ever-popular mini cheesecakes I made a few years ago, these are the perfect way to end your feast! The cheesecake itself is out-of-this-world good, but my favorite part is the candy cactus that garnishes each mini cheesecake.
It’s beyond perfect for Cinco de Mayo, and you won’t believe how easy it is to make.
How to make Mini Cheesecakes:
First, let’s talk about these mini cheesecakes. I think there is something special about single serving dishes. Giving each of your guests a miniature dessert is a surefire way to make them feel important. Here I’ve used small (4 ounce) mason jars to bake up the cheesecakes.
The base is a traditional graham cracker crust while the cheesecake is flavored like a margarita with a splash of tequila, orange liqueur, and lime.
While the flavoring is very subtle, it gives the cheesecake a uniquely fresh quality. It’s the perfect little addition.
With the cheesecakes prepared, let’s talk about these cactus garnishes.
Are they not the cutest things you’ve ever seen? Along with my mini piñatas, these might be the favorite thing about my Cinco de Mayo celebration.
They are really simple to make, too. Just melt colored candy melts (I used green, light blue mixed with green, and yellow mixed with green.) and pipe them onto wax paper. To add to their cuteness factor, I also made a couple edible sugar flowers. Bam!
Just pop them on the top of your mini cheesecakes and they are ready to go. Let’s dig in.
Don’t you just love those cacti? These Mini Margarita Cheesecakes are the perfect way to end such a festive celebration.

In a medium bowl, combine crushed graham crackers, sugar, and butter.
Press two large tablespoonfuls into each mason jar. Use a clean cork (from a wine bottle) or something similar to press the mixture tightly into the jar. Set aside.
Preheat your oven to 350 degrees F.
In a large bowl, beat the cream cheese until fluffy. Slowly pour in the condensed milk. Beat again. Add the lime zest, lime juice, tequila, and orange liqueur. Beat until smooth.
Finally, add the eggs and mix well.
Scoop the batter into the jars until about three-quarters full. (About 3 large tablespoons per jar.)
Place the jars into two 13x9" baking pans. Twelve jars per pan. Then fill the pans with hot water. The water level will be about halfway up the jars. Bake for about 20 – 25 minutes or just before the cheesecakes begin to brown.
Carefully remove the pans from the oven. (The pans and the water will be very hot.) Using a towel or oven mitt, remove the jars from the water and allow them to cool completely.
Notes
*To make the candy cacti, you'll need about 1 cup of candy melts. Line your counter with waxed paper. In a microwave-safe bowl, microwave the candy in 30-second intervals, stirring in-between, until melted. Place the melted candy into a pastry bag (or plastic baggie). Snip of the corner off the baggie. Pipe cactus shapes onto the waxed paper. Garnish with a candy flower before they set. Chill completely before removing them from the wax paper. Use the cacti to garnish your cooled mini cheesecakes.

These Tequila Lime Chicken Kabobs are loaded with flavor thanks to a tequila inspired marinade. They are garnish with lime and pineapple then grilled to perfection!
Let the fiesta continue with these Tequila Lime Chicken Kabobs! We’re celebrating Cinco de Mayo on IBC this week.
While chips, salsa, and guacamole are a must, I also want to recommend these Tequila Lime Chicken Kabobs for your celebration.
How to make Tequila Lime Chicken Kabobs:
As I mentioned, tequila pairs nicely with citrus. Of course, foods which work well with citrus also go great with tequila. Chicken is is one of them.
These kabobs start off with a big flavor boost because they marinate in tequila, lime juice, garlic, honey, and spices. I recommend letting them soak up all that flavor overnight, however an hour or two will also work.
With the chicken ready, I skewered it along with fresh cut pineapple (It complements the margaritas.) and thinly sliced limes. You can use whatever combination of vegetables you’d like. Red peppers and red onion would be a great addition.
One of the reasons I like serving kabobs at a party is because they can be prepared in advance. They only require a few minutes on the grill, so cooking them just before serving is easy. Plus, there’s a bit of entertainment value to grilling as well. The flames and aroma only add to the celebration.
You can serve the kabobs in a number of ways. One option is to have a taco salad buffet so guests can create their own salads.
Another possibility is a taco or nacho bar with chips, salsa, and all the fixings. A third alternative might be to serve the kabobs with rice, beans, and Mexican-style corn on the cob. No matter what your decide, your guests are in for a treat.
Tequila Lime Chicken Kabobs
serves 8
2 cloves garlic, minced
½ cup freshly-squeezed lime juice
1/4 cup Sauza® tequila
2 tablespoons canola oil
2 tablespoons honey
½ teaspoon ground cumin
1 teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
2 pounds boneless, skinless chicken breast, cubed
Wooden skewers (soaked in water for 10 minutes before preparing kabobs)
2 limes, sliced
2 cups fresh pineapple, cubed
Additional salt and pepper to taste
In a large bowl, whisk together the garlic, lime juice, tequila, oil, honey, cumin, paprika, salt and pepper. Add the cubed chicken and toss until coated. Cover and refrigerate for 1 hour or up to 8 hours.
Preheat grill to medium-high heat.
Remove the chicken from your bowl. Thread the chicken onto the skewers, alternating with the lime slices and pineapple cubes. Sprinkle with salt and pepper to taste. Grill the kabobs for about 8 minutes or until the chicken is thoroughly cooked. Turn as necessary though the cooking process. Remove from the grill and serve immediately.

Welcome back to the Cinco de Mayo festivities here on IBC. If you’re new to the party, you might want to start here. However, if you’ve been following along, here’s today’s second cocktail recipe: Jalapeño Paloma!
Jalapeño Paloma:
Did you know that the Paloma, not the margarita, is Mexico’s most beloved cocktail? Yep. I’m not kidding. While margaritas are more popular here in the US, the Paloma is king in Mexico. Because of this, I had to include a Paloma in IBC’s Cinco De Mayo celebration. However, in true IBC style, I decided to turn up the heat.
How to Make a Paloma:
Traditionally, a Paloma is made by combining tequila (Reposedo is best.), lime juice, grapefruit soda, and a bit of salt (on the rim of the glass or in the cocktail.) That’s it. Tequila pairs really well with citrus. It’s a simple combination, but it works beautifully.
To give it a bit of kick, I’m adding a couple of fresh jalapeño slices. There’s something about that heat and flavor in a drink that I really love. (Bringing a a hint of heat to a cocktail is something I like to do. You will find more examples here and here.) You can add more or less jalapeño depending on your preference.
Also, the simple syrup in this recipe is optional. If you prefer things less sweet or more tart and earthy, leave it out. However, if you enjoy a touch of sweetness in your cocktails, throw it in.
No matter what variation you make, you should definitely give this beloved cocktail a try.
It’s certainly pretty, right? I love that coral pink color. (Oh, and in case you’re wondering, those spectacular gold pineapple glasses were a HomeGoods find.)
If you’re throwing your own Cinco de Mayo party, I definitely recommend adding this to your lineup. While margaritas are a must, it’s nice to introduce something different to your guests.
1 ½ parts Sauza® tequila
3 parts freshly squeezed grapefruit juice
½ part freshly squeezed lime juice
¼ part freshly squeezed lemon juice
½ part simple syrup*
2 fresh jalapeño slices
Soda water
Kosher salt, lemon wedge, and lime wedge for garnish
Begin by rubbing the rim of a glass with a lime wedge, and then dip the glass into kosher salt. Set aside.
In a cocktail shaker, muddle two slices of jalapeño with a splash of the tequila. Add the remaining tequila, lemon, lime, grapefruit juice, simple syrup* and ice. Shake vigorously. Strain into the prepared glass. Add ice and top with soda water. Garnish with a lemon wedge and lime wedge.
*The simple syrup is optional. If you prefer your drinks a bit sweeter, it is recommended.

This Vanilla Pineapple Margarita is a sweet and tropical take on the classic. The flavors blend perfectly to create a really unique and delicious cocktail recipe.
Now we’re ready to dive into some recipes. Today, I’ll be sharing two takes on classic Cinco de Mayo cocktails. My first recipe is for a margarita, but I’m turning up the flavor volume by making it a Vanilla Pineapple Margarita.
How to Make a Pineapple Margarita:
Begin by rubbing the rim of a glass with the orange wedge, and then dip the rim into sugar.
Thanks to pineapple juice and a splash of simple syrup, this margarita is a bit sweeter and fruitier than a traditional margarita. Because of this, we are rimming our glass in coarse sugar (instead of salt). I like coarse sugar because it has bigger crystals than granulated sugar, plus it adds a bit of sparkle to the glass.
To make the flavors of this cocktail really come alive, (in addition to the pineapple juice) we’re incorporating the seeds straight from the vanilla bean. The seeds lend a natural and bold vanilla flavor.
To a cocktail shaker filled with ice, add the pineapple juice, tequila, orange liqueur, and orange juice. With a sharp knife, scrape a few of the seeds from the vanilla bean and add them to the shaker. Shake vigorously. Strain into the prepared glass and top with ice.
As these little seeds get shaken up into the cocktail, they also give it a beautiful speckled effect. At a glance you know that this drink is infused with a delicious vanilla flavor.
Garnished with a piece of fresh pineapple and sliver of vanilla bean, this Vanilla Pineapple Margarita will help you kick off our Cinco de Mayo Celebration.
It’s that simple. Naturally, you can double, triple, quadruple, etc. this recipe to serve as many people as you’d like. However, be sure to shake the mixture thoroughly to get those vanilla seeds evenly distributed.

Last year before I jetted off on a trip, I had fun sharing some of my “Whatcha Packin” essentials for travel. A lot of you seemed to enjoy that post, which also included travel tips, so I thought it’d be fun to create Whatcha Packin #2.
Even though it’s only May, it looks like 2016 might be my biggest travel year yet. I truly welcome the chance to travel. Exploring different environments is one of my favorite ways to get inspired. Whether it’s a delicious meal, a fabulous design, or an ingenious product, I soak it all in when I travel.
Despite all the joys of journeying to new locales, travel is not without a few challenges. I’m about three hours from a major airport so getting anywhere takes a bit longer for me. Plus, most of the time my travel is work related, so I need to pack essentials that allow me to stay connected and be productive. Sometimes it can be a lot. However, I’m not complaining. Bring on the travel. Bring on the inspiration.
Let’s dive into Whatcha Packin #2.
Other than my wallet and ID, one thing I never leave home without is my phone. Lately I’ve been relying on the Samsung Galaxy S7 Edge. While, I appreciate all of the standard features on this phone, I love the camera. (In fact, I used it for many of my photos of the HGTV Dream Home.) While I do still like traveling with an actual camera, this phone could almost replace it. Another feature that has been immensely helpful is the phone’s mobile hotspot. When I need to hop online with my computer, but am in an area that doesn’t have wireless Internet, this phone is a lifesaver.
Speaking of cameras, I recently updated to the Canon G7X. In my previous post, I talked about a Sony camera I was using. The Sony is a good camera, but being a Canon guy, I found it challenging to figure out the Sony. With cameras, I’ve discovered it’s best to stick with a familiar brand when possible. This makes learning the functions much easier.
While we’re on the subject of cameras: My dad got me a Go-Pro for Christmas, so I also tossed that in my bag. The Go-Pro is perfect for video on the go. Plus, it’s waterproof which allows you to get some interesting footage.
And yes, I’m still traveling with a portable charger. If you don’t have one of these and travel frequently (or just happen to find yourself away from an electrical outlet and have a phone that’s constantly dead), this is a must. This is the model I currently have. It’s a bit on the larger size, but I can use it again and again without needing to charge it. If you get one, you will no longer be one of those people huddled around an outlet at the airport. You’re welcome.
When packing my clothes for a trip, I like to stick with a similar style / color palette whenever possible. During the summer months (or when visiting some place warm), these boat shoes are my go-to. Not only do I love the color, but you can dress them up or wear them with a pair of casual shorts. There’s no need to pack dress shoes and casual shoes. I also like to bring a coordinating watch, which can instantly give an outfit a dressier look
The same principle applies to sunglasses. On my first cruise I remember taking along six pairs of sunglasses to match my various outfits. Ridiculous. Now I just pack one pair, or maybe two. Recently, I’ve been wearing quality black aviators because they work with most things and are always in style.
When thinking about summer travel, we all know that shopping for a swim suit can be the worst. My recommendation? Find a brand and fit that you feel comfortable and happy in and then stick with that. I really love these from 2xist. The fit is good, and this style is available in a variety of colors. Since black works nicely with my skin tone, it’s usually my go-to color.
Finally, let’s talk about a few other essentials. First, I always use a backpack as my carry-on luggage when flying. Backpacks have so many features these days, and they allow both of your hands to be free when navigating the airport. I know tote bags are “totes cute,” but trust me on this one. Second, always pack some sunscreen. You just never know when you’ll need it. This one from Sun Bum is my current favorite. Last but not least, a good book is essential. I love technology, but now and then I need a break from screens. Some light reading (currently reading this) is always welcome.

Do you ever get tired of the same ol’ dessert? Me, too. It’s such a struggle. 😉
Today, I’m sharing a fun and yummy Nutella S’more Brownie Pizza. I love this recipe for at least three reasons. First, it contains several of my favorites: brownies, Nutella, and mini peanut butter cups. Second, it’s super simple to put together (You know how much I love that.) And lastly, it’s one of those recipes that you can make any way you like.
I give topping amounts in the recipe, but feel free to make the pizza your own by using more or less of something, not using one of the toppings, or adding one of your favorites. Since the crust is just a prepared box brownie mix, you can get creative and have a lot of fun.
However, with summer fast approaching, right now I’m leaning toward this combination of flavors.
Pro Tip: Whip this pizza up on a rainy day when you have a s’more craving but can’t get the campfire going.

Nutella S'more Brownie Pizza
Serves 12
1 package fudge brownie mix (plus ingredients to prepare batter)
1/2 cup Nutella (warm for 15-20 seconds in the microwave to thin)
1 cup mini marshmallows
1/2 cup mini peanut butter cups
1/2 cup Teddy Graham Crackers
Begin by preheating your oven to 350 degrees F. Then grease a 12-inch pizza pan with baking spray. Set aside.
Prepare brown mix according the the package directions.
Spread the batter into the prepared pizza pan. Bake for 15 minutes or just until the edges are set. Allow the brownie crust to cool, then spread with the Nutella. Sprinkle the partially baked brownie with the marshmallows, peanut butter cups, and Teddy Grahams.
Return to the pizza to the oven. Bake an additional 8 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. To serve, cut into wedges.

Welcome to my Spring Living Room! This year I decided to not do a Spring Home Tour. (You can find all of my past home tours here.) Since I haven’t made many changes around here, I figured I’d hold off on another tour until summer.
However, it’s been a while since I showed you around, so I thought it’d be a good idea to give you a couple room tours leading up to the official summer home tour. Sound good?
Let’s start with the living room. (As always, all of my home’s paint colors can be found here.)
As I said, not a whole lot has changed. Most of the changes are accessory swaps from last fall. As I mentioned during my Holiday Home Tour, I’m trying to incorporate more black accents in this room to tone down the colors. When I found these graphic striped vases, I knew they would look perfect on my mantel. Throw in a gold vase (from my buddy Nate’s collection) and some flowering twigs, and I was in business.
Another big change in this space was replacing my yellow pattern poufs with these gray cable knit ones. I picked them up this past winter, and they are working great in this space. I also like them because they’re a bit sturdier than the previous ones.
Speaking of cushions, I kept the throw pillows the same. I found a pair of gray pillows for a steal at HomeGoods this past winter. And although you wouldn’t think gray pillows would work on a gray sofa, they really do. I love that they add comfort and volume without too much pattern.
I’m also kind of obsessed with this big gold wishbone my mom bought for me. I believe she found it at Boscov’s, which is a department store similar to Macy’s.
Naturally, because it’s spring, I had to tuck in a few fresh flowers here and there Also, since I’m cheap, I picked them up at the grocery store for next to nothing. (Check out this post for my Grocery Store Flowers styling tips.)
Sidenote: See that bowl with the black interior? Yeah, that used to be filled with chocolates. Now it’s just filled with regret.
Another thing I wanted to mention is my rug. MANY of you ask about it here and on social media. I purchased it from CB2 several years ago, and unfortunately they no longer sell it. However, I did notice that West Elm (here and here) and Rugs USA (here) released a few that are very similar in style. The pattern is almost the same; only the coloring is different. These would be great options if you’re looking for something similar.
Also, in case you missed it, I gave my fireplace a quick refresh with paint. I can’t believe what a difference it made. I’m still loving the change, and it’s held up wonderfully. You can read more about that here.

When it comes to vacations, usually I’m game for almost anything. As long as I have a drink in hand, and I’m near the beach or a body of water, I’m happy. Over the past few years, I’ve discovered a love for cruising.

With a few cruises under my belt in partnership with my friends at Carnival Cruise Lines, I thought I’d share my top tips for cruising. Whether you’re a first timer or an experienced cruiser, I think these ideas will help you have the vacation of a lifetime and take advantage of all the benefits of cruising.
Choosing a Cabin
On cruise ships, there are many stateroom options. There’s something for everyone, from an interior cabin (inside the ship, no windows) to a suite (includes a balcony and has more space). Before selecting your cabin, think about how you will use your cabin. If you like lots of quiet time by yourself, a balcony or suite might be a perfect option. However, if you’re more of a social person and plan to take advantage of every amenity the cruise offers, an interior room could work perfectly for you.

I’ve always opted for a balcony because I like to look out on the water when I sip my morning coffee. However, I was talking with a couple on my last cruise who always choose interior rooms. They don’t spend much time in their room so purchasing an interior room allows them to save money and take more cruises. (I’d easily give up my balcony for another cruise each year.)
PRO TIP: Be honest with yourself about how you will use your cabin and go from there. Keep in mind that with all the ship has to offer, you’ll probably spend less time in your room than you think.
Pack Smart
Unless you are naturally a light packer, you will not wear everything you pack. I promise. Even after five cruises, I still haven’t learned this lesson, but I’m trying. Again, what you pack depends on how you plan to enjoy your cruise. For a typical day at sea, I’ll start with breakfast, take a walk or exercise a bit, lounge at the pool or on deck, and then go to dinner and evening activities. That means I’ll need attire for the morning, my swimming suit (which I’ll wear most of the day), and another outfit to wear for a few hours at night. One thing I love about Carnival is that you can get away with being pretty casual if you wish. Meaning, if you’re a guy, you could spend the whole day in a swimming suit and t-shirt and then dress up for dinner.

For me, the less luggage I have to haul around the better so I suggest choosing things you can wear multiple times in different ways to get a variety of looks. Also keep in mind that there are usually a couple formal nights on the ship. While you don’t need a tuxedo or long gown, do plan to bring something a bit dressy for these evenings. Besides, who doesn’t love dressing up every once in a while.
PRO TIP: Take fewer shoes. Try to find a pair of sandals, casual shoes, and dressy shoes that will go with all of your outfits. This will eliminate the need to pack something to match every color.
Excursions
Typically, a cruise consists of sea days and port days. On a sea day, you’ll be on the ship sailing to your designation. On a port day, you’ll be at a beautiful location with the opportunity to leave the ship and explore. Getting off the ship is optional. Most ports have shopping and activities right as you exit the ship. You also have the opportunity to book excursions which take you a bit farther from the ship. These activities range from a relaxing getaway to a secluded beach to touring a nearby town to zip lining through the forest. I highly recommend planning ahead to find the excursion that works best for you. Read up on your adventure before booking. I like to check reviews of the excursion, the activity level, and how far it is from the ship.

PRO TIP: Port days are great and people love getting off the ship. If you’re looking for a more relaxing day and aren’t interested in the particular port, keep in mind that the ship will be pretty quiet since most people have disembarked. This is an opportune time to find the perfect lounger and settle in with a good book.
Explore the Ship
During the first day or two of the cruise, set aside time to fully explore your ship. Walk around every floor, check out all of the exterior decks, find all of the restaurants and bars, etc. Not only will this help you to get comfortable with the layout of the ship, but you’ll be able to plan which places you want to visit.

With so much to do and see on every ship, you’d be amazed how much you can miss if you don’t explore. For example, on my last cruise, I didn’t realize there was an outdoor deck on the fifth floor until halfway through our voyage. It turned out that I really liked that deck and spent a lot of time there once I found it.

Also, if you enjoy a few libations while on vacation, you can look into the bars on the ship. Two of my favorite Carnival bars are the Alchemy Bar and the bar in the lobby area. However, get a feel for the atmosphere of all of the bars on your ship and see what you like best or what matches your mood.
PRO TIP: I love exploring the ship with my camera during the “golden hour.” This is the hour when the sun is either rising or setting. The light is beautiful and golden which creates the perfect backdrop for stunning photos.
Specialty Restaurants
Speaking of exploring, you’ll definitely want to take advantage of your ship’s specialty restaurants. For a nominal free, these specialty restaurants are designed to offer exceptional, personalized dining experiences.

On my last cruise, I visited Fahrenheit 555 (steakhouse), Cucina del Capitano (Italian), and Bonsai Sushi. While all were delicious, my favorites were the steakhouse and sushi restaurant. The service and presentation at Fahrenheit 555 was at the level you find at a fine dining steakhouse. I also loved my meals at Bonsai Sushi. (Yes, I went a few times.) Living in Central PA, it’s a challenge to get good sushi, so I took advantage of it on the ship. The rolls are made to order, and everything is delectable.
Depending on your ship, you’ll also want to check out the Taste Bar which offers samples from the ship’s various restaurants so you can get a taste of their menus.
PRO TIP: Plan ahead and book your reservations as soon as possible. This will allow you to get the dining time that works in your schedule.
Say Hello
My final tip is to say hello. Granted, your goal for your cruise may be to relax and enjoy quiet moments by yourself. However I recommend meeting some new folks while on your cruise. On each of the cruises I’ve been on, I’ve become acquainted with at least a few of my fellow passengers, some of whom I still stay in touch with via social media. Not only is it fun to meet new people and share this experience, but other cruisers can be a source of really helpful information.

Just by talking to people I’ve learned about good excursions, new drinks to try, and the best shows to attend. It pays to interact with others on the ship.

I also think it’s important to use your cruise to “say hello” to new things. You’d be amazed at the new foods you can try, new adventures you can take, and new experiences you can have. With not much to lose, take advantage of all of the things this vacation has to offer. Even if you don’t end up loving every new thing you try, you won’t regret the adventure. And who knows – maybe zip lining in the woods, riding waterslides, singing karaoke, or swimming with the dolphins could be your new favorite thing!
PRO TIP: Engage with the cruise staff as well. Over the week you’ll build wonderful relationships with your room stewards, bartenders, and waiters. By the end of the week, they’ll know your name, drink orders, etc. This really adds to the whole experience.

Can you believe we got 4 inches of snow here this past Friday and Saturday? I’m not complaining, however, since our winter was so easy (I think I only had to shovel snow three times.) and, as I type this, that 4 inches of snow has already melted. Goodbye, snow. You won’t be missed.
Despite the snow, my mom and I drove to State College, PA on Saturday morning. We did see two cars in ditch, but fortunately we arrived safely. I’m sure I’ve mentioned this before, but I usually hit up State College every month or so. They’ve got Target, Trader Joe’s, HomeGoods, and other stores I can’t live without. They also have Starbucks. I know it’s not the fanciest brew, and you can call me basic if you want, but I love me some Starbucks. My current favorite? A grande white chocolate mocha with skim milk, hold the whip. (Those last two details are my attempt to convince myself it’s healthy.)
With Starbucks in our hands, Mom and I shopped our little hearts out. A big reason for me to make this trip was to visit HomeGoods. Recently, I was invited to again be part of their fabulous DesignHappy blog team (You might remember that I wrote for them back in 2014.), so I had some shopping to do for several posts I’m working on. I love shopping as much as I love Starbucks, so it was a good day.
You might also be wondering what all of this has to do with Tuesday Tunes. Well, popping into Starbucks reminded me how much I like the music that’s played in coffeehouses. If I’m not mistaken, “coffeehouse music” is an actual genre these days. There are music stations dedicated to it, so it must be.
While I could probably make 100 lists of coffeehouse tunes (and given enough time, maybe I will), today I’m sharing a playlist inspired by my favorite coffee beverage, White Chocolate Mocha. It’s a blend of tunes that are appropriate with your morning, afternoon, or evening brew. It’s a bit acoustic with a touch of country and a splash of singer-songwriter. I hope you enjoy it.

Beach Bum Terrarium:
You probably don’t need a tutorial to put together a little garden, but I’m going to give you one anyway since this is such a cute project. As you’re sure to notice, this short tutorial is a lot like the one for my Tabletop Cactus Garden, but this time I’m using succulents.
This project was inspired by these model train people figures I found online. (You can find them here.)
The people are wearing bathing suits, bikinis, and Speedos. I love a touch of quirky in my home decor, so I had to find a way to incorporate the figures. This tabletop garden is my weird take on the fairy gardens that are popular right now.
With you’re succulents in place, create a beach with the sand and an ocean with the colored glass stones.
Finally, insert some beach bums to enjoy this little paradise you created for them.

Of the many things I wish were easier to access where I live (e.g., beautifully crafted coffee beverages, artisanal cheeses, and Target), fresh cut flowers are pretty high on the list. I know I’m not alone in this. Within the past year, several fresh cut flower delivery services have popped up online. And while they offer beautiful options that are great for gifts, most of us can’t afford to have flowers delivered to our homes on a weekly basis.
In my dream world, I would be able to walk five minutes to the center of town, stop at my favorite coffee shop (where they know my order), eat a cupcake, and then on my way back home, pick up a warm loaf of bread along with fresh flowers. (Also in this dream world, it would be sunny and 70 every day, and carbs and sugar would be healthy, and I would have a six pack and be happily married. #DreamBig)
So, after going back and forth a few times about whether to just spend the money and get the beautiful flowers I wanted from an online vendor, I decided not to click “order.” Instead, I hopped in my car and scooted off to the grocery store. I bought twice as many “cheap” fresh cut flowers for less than $30. When I got home, I spent about 10 minutes preparing the flowers and arranging them in a half dozen vases that I spread around my house.
Obviously, “professional” photography helps to make these blooms and arrangements look extra special. Nonetheless, the photos do show that by using what you have and staying within your budget, you can still have beautiful things. Yes, I would prefer the silver dollar eucalyptus and ranunculus I saw online, but these arrangements are just as pretty. Plus, I have some spare change to buy a beautifully crafted coffee beverage.
As I think about it, there may be a bigger life lesson tucked in this story. Maybe it’s a reminder not to be so enthralled with the beauty of others that we fail to notice the beauty right in front of us.
You know what I mean.
In case you also decide to buy grocery store flowers or pick some spring blooms from your garden, here are my no-fail quick tips for arranging flowers.
Flower Arranging Tips
1. Recut the stems at an angle (Cut off at least an inch.) before arranging.
2. Remove 95% of the leaves, especially any that would be below the water line
3. For taller arrangements, make your bouquet one-and-a-half-times higher than your vase.
4. Monochromatic arrangements always look great. Add interest by switching up the texture of the blooms.
5. Try using a short and stout vase. Pack the flowers in tight.
6. Use a large gathering of a singe type of flower for a big impact.
7. Change the water every couple days.
Naturally, you can break these rules, but they’re a good place to start.

Stop, drop, and dance! I’m so excited that you’re enjoying my series, Tuesday Tunes. This probably won’t be a weekly series, but this past weekend I was grooving to the beat and managed to whip up another playlist of funky tunes.
As you might have guessed from my cheesy play on words, this playlist is a bit more upbeat and happy. It’s one of those playlists you listen to when you have about an hour to clean your house before company arrives, and you need to get your rear in gear. It would also work when you’re preparing dinner and just want to shake that booty while you cook up some goodness. However, I especially love it for those days that aren’t so magical, and you want some tunes that make your shoulders shimmy.

Last week I had the amazing opportunity to escape to Florida for 48 hours and visit the 2016 HGTV Dream Home. How you ask? Well, if you remember, last year I worked with the folks at GMC to shop the World’s Longest Yard Sale to decorate a Habitat for Humanity Home in Atlanta, Georgia as part of the Hidden Treasures Adventure.
Well, it just so happens that GMC is a sponsor of the dream home, and they are about to release their redesigned 2017 GMC Acadia. GMC invited the entire group of bloggers who participated in the Hidden Treasures Adventure (and some additional bloggers) to test drive the new Acadia to the HGTV Dream Home and then tour the property. Needless to say, I was pretty darn excited. This felt like one of those once-in-a-lifetime opportunities. With my duffle bag packed, I headed off to Florida.
In Orlando the group of us hopped into a caravan of the new Acadias. (Details about these amazing vehicles can be found here. They pretty much drive themselves [not really, but close] so you’re going to want to check them out.) We made a one hour trek to Merritt Island to get all up in 2016 HGTV Dream Home. Let me show you some of my favorite places in the house.
Because I can, I’m going to jump from room to room in no particular order. Cool? Also, before we get into it, the designer for this home was Brian Patrick Flynn. He was actually on the property for our tour. He’s crazy talented (Check out his IG feed for more of his work.), very kind, personable, and easy on the eyes.
One of my favorite rooms in the house is the media room. With aqua walls and pops of pinks, it is hard not to smile in this space. The touches of gold help, too. I especially love the expansive gallery walls on the two opposing walls.
There are two guest bedrooms on the first floor of the home. The white bedroom is easily my favorite. Presumably inspired by the beach, this room has a beautiful combination of styles. Traditional furnishings, paired with both modern and rustic accessories give it the eclectic style that I’ve come to love.
Also, the massive DIY string art in the adjoining bathroom is incredible. So is the floor-to-ceiling blue penny tile.
While beautifully designed, the second guest bedroom is probably my least favorite room in the house. I just don’t love orange. However, there are some elements that I really appreciated, such as that cozy cable knit blanket.
Moving on to the living room. This space totally tickled me because of its eclectic appeal. While most of the furnishings are traditional and neutral, the whole space is enveloped in a graphic mural photograph of vintage surfers. A bold choice, but a great use of such a big wall.
The coffee table is also a step out of traditional as it’s made with rebar and topped with glass. It works quite well with the trio of light fixtures that hang above it.
The kitchen is set just behind the living room. Although I appreciate its design, I wasn’t wowed by this space. These days, I think kitchens should be the jewel of the home.
However, I do love the brass hardware as well as the use of the dresser in this space. It helps give things a warm and cozy feel.
The dining room is opposite the living room. Again, classic furniture choices in a neutral palette make this space feel light and welcoming.
I’m also a big fan of the non-traditional large graphic art work.
Just behind the dining room is a little entryway area near the garage. A narrow entry table, artwork, and baskets for storage make excellent use of the space.
The master bedroom is the only room on the second floor in addition to a huge closet and master bathroom.
It is another gorgeous space with fabulous design elements. The only thing I might change here is painting the ceiling a less saturated color. While I love the color, it’s just a bit much for me when it’s wrapped all the way around the room.
You’ll also notice it “colors” other things in the room like the bedding and furniture, so everything has a touch of turquoise.
However, it’s still a beautifully designed space. (Love you, Patrick!) I especially like how the television is incorporated into the gallery wall and almost disappears. The little seating area in this space is also a lovely addition.
The master bathroom is insane.
A modern tub sits in the middle of the room under a gold and crystal chandelier. Behind it is a huge walk-in shower with a shower head and shower jets. Double vanities, more penny tile, and lots of storage make this a luxurious, yet relaxing space that fits the rest of the home.
Last but certainly not least, is the backyard. Complete with multiple patios, a lanai, pool, grill, outdoor shower, and dock – this space has everything you need in a backyard. Seriously.
The house of my dreams will have exactly the same things.
I also wanted to mention how much I love the black windows with the white house. The look is gorgeous.

These Italian Sub Sandwich Roll-Ups make a delicious and easy appetizers with all the flavors of a classic Italian sub!
Italian Sub Sandwich Roll-Ups:
Today, is a special day on Inspired by Charm. Not only am I teaching how to make these Italian Sub Sandwich Roll-Ups, we’re having a baby shower! I bet you didn’t expect to be attending a baby shower on a random Wednesday in March. Surprise!!
My friend Joanne of Fifteen Spatulas recently welcomed her first little bundle of joy to the world. (Yes, this is a Welcome Baby Shower rather than a Pre-Baby Shower.) A group of bloggers thought it would be fun to throw Joanne and her new baby James, a little party!
All of us have teamed up to share lots of delicious recipes, including appetizers, desserts, and nonalcoholic drinks! I’m joining the appetizer crew to make Italian Sub Sandwich Roll-ups. When it comes to parties in my family, roll-ups are a must, so I thought I’d also make them for Joanne’s virtual shower.

As I said, I love roll-ups (or pinwheels if you prefer) for entertaining. Not only are they simple to make, but they look beautiful and are full of flavor.
How to Make Italian Sub Sandwich Roll-Ups:
These roll-ups channel the flavors of a classic Italian sub. To start, a layer of cream cheese is loaded with Italian seasonings and sub sandwich veggies. This stuff is yummy. I especially love the addition of the banana peppers.
With the cream cheese layer evenly spread on a tortilla, you can start building the other layers which include salami, pepperoni, and Provolone cheese.
Tomatoes and mixed greens finish things off, and now you’re ready to roll.
After inserting a few toothpicks to hold everything together, cut the rolled-up tortilla into one-inch slices and serve.
Who knew you could pack the yumminess of a classic Italian sub into a bite-sized appetizer?
The recipe is below, but feel free to make these Italian Sub Sandwich Roll-ups your own. If you don’t like black olives or if tomatoes aren’t your thing, leave them out. You do you!
Now, let’s get cooking. We have a baby shower to get to.
2large tomatoes - thinly sliced (remove some of the juice and seeds)
3cupsmixed greens
Instructions
In a medium bowl, combine the cream cheese, salad dressing mix, banana pepper, red onion, green onion, red pepper, and black olives. Mix with a hand mixer until combined.
Spread about 1/4 cup of the cream cheese mixture onto a tortilla.
On top of the cream cheese mixture, place four slices of salami, three slices of pepperoni, and three slices of Provolone cheese, leaving a 1/2-inch border around the edge.
Top with a few slices of tomato and a sprinkle of mixed greens. Roll up tightly.
Place several toothpicks about 1-inch apart down the rolled tortilla. Cut in between the toothpicks to create the pinwheels. Repeat with the remaining tortillas and fillings. Refrigerate until it's time to serve them.
Tada! Your appetizers are ready. Pretty simple, right? I think Joanne will love them.

Blueberry Almond Pancake Pudding:
Sunday morning is my favorite time of the entire week. For some reason, it just feels different from any other day. If you took away all of my calendars and clocks, I could probably still tell you when it’s Sunday morning. I’m not sure why. Everything is a bit more peaceful. Time moves more slowly, the coffee tastes a touch sweeter, and things just seem more joyful.

If you’re like me and want to enjoy a cozy and quiet Sunday morning, I’ve got the perfect recipe for you -Blueberry Almond Bread Pudding.
I saw a similar recipe in a magazine recently and just had to give it a try. Since I love both pancakes and bread pudding, I thought the combination would be perfection. Top them with an extra large whoosh of Reddi-wip (which is made of real cream, by the way) and a generous drizzle of maple syrup and you’ll be in business.
The premise behind this recipe is creating a traditional bread pudding using pancakes instead of bread. Genius, right?
How to Make Blueberry Almond Pancake Pudding:
While I provide a pancake recipe below, you can certainly use leftover pancakes or your own favorite recipe. However, stick with homemade; they taste so much better and are a breeze to make.
Another thing I love about this recipe is that there is some absorption time required. This means, that you can put together this dish the night before and just throw it in the oven in the morning.
That also means that all of the mess and dishes are cleaned up the night before so you can really enjoy a quiet (not to mention clean) morning. Who doesn’t love that?
With the pancake layers in the pan, a custard mixture of eggs and milk is poured over the top. Once baked, it becomes this dense, moist, and indulgent breakfast. Talk about taking pancakes to the next level.
I added blueberries and almonds to this recipe because I love those flavors together. There’s something about blueberry pancakes that just makes me feel at home. However, if you or your guests prefer chocolate chips or raspberries or bananas, feel free to create another flavor combination. Have fun with it.
And topping it off with maple syrup, more blueberries and almonds, and lots of Reddi-wip brings this whole fabulous concoction together for one fabulous breakfast treat.

Maple syrup and additional fresh blueberries and almond slices to garnish - optional
Instructions
Begin by preparing the pancakes. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the milk, sour cream, one egg, and almond extract. Stir the milk mixture into the flour mixture until just combined.
Heat a griddle or nonstick pan over medium heat. Lightly coat with butter. Use a 1/4 measuring cup to ladle the pancake batter onto the griddle. Cook 3-4 minutes until bubbles form on the top of the pancakes. Flip and cook until set in the middle. Repeat with all the batter. You will have about 12 pancakes.
Slice the pancakes in half. Place the pancakes cut-side down into a 8x8 baking dish. Scatter with about 3/4 of the blueberries, tucking a few in-between the pancakes. Repeat with the sliced almonds. Then, in a separate bowl, whisk together the eggs, half-and-half, sugar, vanilla, almond extract, cinnamon, and salt. Pour the egg mixture over the pancakes and chill for at least four hours or overnight.
Preheat the oven to 350 degrees F. Bake 30-40 minutes until puffed in the middle and set. Let stand for 10 minutes before serving.
To serve, use a spoon to plate the pancake pudding. Garnish with a whoosh of Reddi-wip and top with maple syrup and additional fresh blueberries and sliced almonds.

This Leprechaun’s Kiss Martini is a delicious and festive cocktail recipe to celebrate St. Patrick’s Day!

With St. Patrick’s Day around the corner, I thought it would be fun to share a cocktail recipe for celebrating the day. I
For my St. Paddy’s Day concoction, I looked to the luck of the Leprechaun to create this Leprehaun’s Kiss Martini.
As you will see in the recipe, this cocktail is a simple chocolate martini with appropriate touches to make it perfect for St. Patrick’s Day.
How to Make a Leprechaun’s Kiss Martini:
With pots of gold and rainbows on my mind, I started with a little rainbow sugar rim. While this does take a little effort, the results are totally worth it.
First, gather the colored sugars. Then, add them to a plate in a circle shape in the order of the colors of the rainbow. When adding the sugars to the plate, be sure that the circle shape you’re creating is the same size as the rim of your martini glass.
Next, on a another plate, pour a bit of honey. The honey will allow the sugar to stick to the glass and also work well with the flavor profile of the cocktail.
With honey on the rim of the glass, dip it into the sugars, evenly covering the honey. And voila! Now you have a rainbow-inspired martini garnish to kick off our Leprechaun’s Kiss Martini.
Next, we need a kiss, of course. Unwrap a Hershey’s kiss and place it in the bottom of the glass.
With the prep work complete, you’re ready to shake up the martini. As I mentioned above, this recipe is a standard chocolate martini which alone is wonderfully delicious. However, to add a little “luck of the Irish,” I thought a splash of Baily’s Irish cream was fitting. Add all of those delicious liquors to a cocktail shaker filled with ice, shake, and pour into your prepared glass.
And with that, you have a delectable Leprechaun’s Kiss Martini.
That rainbow rim makes all the difference, right? I’m kind of obsessed with it.
And while it’s tdefinitely appropriate for St. Paddy’s Day, I think it could make any celebratory cocktail a bit more fun and colorful. (Quick tip: If you’re making a citrus-based cocktail, you can just use lemon / lime / orange juice in place of the honey. This will allow the sugar to stick just as nicely.
Pretty simple, right?
And let me tell you friends, it tastes as magical as it looks. I think you’re going to love this one!
