 During last year’s Fall Cookie Week, I created some Cinnamon Waffle Cookies with Maple Glaze. I really enjoyed the recipe and unique take on the classic “cookie”, so I wanted to give them another go. With Valentine’s Day just around the corner, I thought a seasonal variation on my first recipe could be fun and tasty.

With a few simple changes, I turned the original into these gorgeous and festive Red Velvet Waffle Cookies with Cream Cheese Glaze. Oh, and there are sprinkles and Reddi-wip, too. Talk about a tasty treat!

Not only are these cookies so simple to make, but they look perfectly divine for the upcoming holiday. I mean, who wouldn’t want to be greeted by a plate of tiny waffles?

The batter comes together pretty quickly. And the “baking” of these cookies is actually done in a waffle iron to create that classic grid pattern.

As yummy as waffles are on their own, their true purpose is to deliver more deliciousness to your mouth. That’s why I’m topping these with cream cheese glaze. Red velvet and cream cheese go together like peanut butter and jelly so this was a natural choice.

Red and pink sprinkles give these even more Valentine’s Day magic. And, just before indulging, I topped each cookie off with a whoosh of Reddi-wip. Made with real cream, it’s the perfect finishing touch for a waffle of any size.

Now, because this glaze has cream cheese in it, it’s not going to set up like a traditional glaze. So these cookies are best enjoyed the same day.

Ingredients

Cream Cheese Glaze:

Instructions

  • In a medium bowl, whisk together the flour and cocoa powder. Set aside.
  • In the bowl of a stand mixer, cream together the butter, sugar, and salt until smooth (about 4 or 5 minutes). Mix to combine.
  • Turn the mixer to medium and add the eggs one at a time until incorporated. Then mix in the vanilla and red food coloring. Finally, set the mixer on low speed and slowly add the flour. The batter will be sticky.
  • Next, turn on your waffle iron, lightly spray with PAM cooking spray, and set the temperature to medium-high (400 degrees F). Add about a tablespoon of dough to each section of the waffle iron. “Bake” for 2-4 minutes or until the cookies are golden brown. Let the cookies cool and crisp up on a wire rack.
  • For the glaze, beat together the cream cheese and powdered sugar and salt until smooth. Slowly begin to incorporate the milk until you achieve the desired consistency. You may not need all of the milk.
  • Dip the tops of each cookie into the glaze and return them to the cooling rack.
  • Decorate with sprinkles and serve with whipped cream.

  1. I needed something fun and uncomplicated for Valentine’s Day today. Decided on these after seeing them earlier in the month on Instagram. They were a hit with everyone. Not many fans here of cream cheese frosting, so I made a simple white glaze… and used sprinkles too! I look forward to making them again – will probably increase the cocoa a bit. Thank you!
