Well, it’s official. Winter has settled into Central PA. As you probably know, this time of year is not my favorite. I’m not a fan of cold weather, snow, and gray days. We’ve been fortunate to have had very little snowfall so far, but I’m taking it all in stride.

I’m pretty sure I’m not the only one who doesn’t like cold winters, so this month I was inspired to create a treat to warm up our hands and hearts. It’s my mission to share the joy with fellow members of the “when-will-winter-be-over” community! That’s what joy is all about!

Because it’s the start of the year and many folks are working hard at their new year’s resolutions, I decided to keep my joyful idea small, delicious, and comforting. And since one of the flavors that comes to mind when I think home and warmth, is cinnamon, I chose to make crumb cake. It’s not overly decadent so it’s perfect for this time of year.

Now, to keep things small and personal, I thought I’d bake these crumb cakes in mini mason jars. This would make sharing so easy. Plus, it would be the ideal size to enjoy without guilt. (BTW, last year I made several mason jar-inspired treats. Mason jars are perfect when sharing treats since they are low in cost. Plus, they make everything look so much cuter. Don’t you agree?

So, once I had my plan, I got to work. These mini crumb cakes are super simple to make.

This recipe makes 12 mini crumb cakes. This is great since the mini mason jars also come in a pack of twelve.

After my crumb cakes were baked and cooled, I packed them up in a basket to make sharing them even easier.

While these mini treats are great on their own, a guilt-free (15 calorie) whoosh of Reddi-wip (made with real cream), makes them extra delicious and a whole lot more fun! Who wouldn’t be happy to see a guy carrying a basket of treats and a can of whipped topping to share. Yes, please!

Let me walk you through the recipe.

Mini Crumb Cakes

Here's what you will need:
1 1/2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup granulated sugar
1/2 cup vegetable oil
1 egg
1 teaspoon vanilla
1/2 cup buttermilk
Reddi-wip for garnish

Crumb topping:
3/4 cup cake flour
1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon cinnamon
Pinch of salt
4 tablespoons unsalted butter, melted

Begin by preheating your oven to 350 degrees F. Spray 12 mini (4 ounces) mason jars with nonstick flour-added cooking spray.

In a medium bowl, whisk together the cake flour, baking powder, and salt. Set aside.

In a large bowl, stir together the granulated sugar, vegetable oil, egg, vanilla, and buttermilk. Then slowly stir in the dry ingredients that you sat aside earlier.

Evenly divide the batter among the 12 prepared mini mason jars.

Next, prepare the crumb topping. In another bowl, whisk together the cake flour, granulated sugar, brown sugar, cinnamon, and salt. Slowly add the melted butter and stir until large and small clumps form. Spread equal portions of the crumb mixture on the tops of the batter in the jars.

Place the prepared mason jars on a baking sheet. Bake for 25-30 minutes or until a toothpick inserted near the center comes out clean. Allow to cool.

Before sharing, top with a whoosh of Reddi-wip.
