Artichoke Wonton Cups

Except for the three years I lived in Philadelphia, I’ve always spent the evening with my family, and it’s something I’ve come to look forward to year after year.
On Christmas Eve my mom typically serves a ridiculous number of appetizers. Everyone comes over after church, we snack and chat, open a few presents, and snack some more. She usually asks what treats she should make for the evening, and almost without fail, I request these Artichoke Wonton Wrappers.
I’m not sure what it is about them, but they are close to the top of my list of favorite bite-sized treats. Until creating this post, I’d actually never made them.
It turns out, the recipe is pretty simple. Pre-made wonton wrappers are tucked into a mini muffin pan, filled with a delicious mixture of artichoke hearts, veggies, and Parmesan cheese, and then baked in the oven. That’s it!
The resulting appetizers are warm, packed with flavor and even a bit of crunch thanks to the baked wontons. What more could you want? If you give these a try, I’m sure you’ll see why I like them so much.

Pretty simple, right? Not only do these pack a flavor punch, but the use of the wonton wrappers make them seem extra fancy. Your guests will think you spent a lot more time in the kitchen than you did.

Artichoke Wonton Cups
Ingredients
- 24 small wonton wrappers
- 12 ounces jquartered and marinated artichoke hearts, drained and chopped
- 1/4 cup shredded Parmesan cheese
- 1 garlic clove minced
- 1/4 cup sliced pitted black olives chopped
- 1/4 cup red bell pepper chopped
- 1/2 cup mayonnaise
Instructions
- Preheat oven to 350 degrees F.
- In a medium-sized bowl, stir together the artichoke hearts, Parmesan cheese, garlic, black olives, red bell pepper, and mayonnaise until well combined. Set aside.
- Spray the cups in a mini muffin pan with oil. Then, gently press one wonton wrapper into each cup. Evenly fill the wonton wrappers with the artichoke mixture.
- Bake for 12-14 minutes or until the wonton wrappers are just browned and the artichoke mixture is bubbly. Serve warm.
I always make the sausage ones…have been doing them for years. But, these artichoke ones are a wonderful change!
I changed this just a bit…I used regular canned in water artichoke and spiced them up..didnt want all that oil.
Then mixed it with the other ingredients. The first time I made them the wontons got all soggy in the bottom and just fall apart when baking so times after that I prepared the wontons ahead of time, prepared the mixture of all other ingredients and microwaved them for 30 secs. after filling the wontons I topped them with cheese and zapped them in the microwave for 20 seconds for the cheese to melt…they come out perfectly great every time

My wife and I are watching calories (Noom). What I calculated was 56 calories for 1. Could you tell for sure what these for 1 each?.
Can you fill the wrappers ahead of time? I was thinking of preparing before church and then popping them in the oven when we get home.
Can you use cream cheese instead of mayonnaise?
You can try whatever you’d like, but I like them as the recipe states.

I accidentally purchased artichokes in water, rather than marinated. Thoughts on the difference that might make?
Yes. The marinated have a lot more flavor.

Can these be made ahead and microwaved if taking to a friends Christmas party?

My two 15 year old daughters and I made these and they were a big hit with my folks who are 85 and 87. If you can chop ingredients into tiny pieces, you can make these. Thank you so much for your great recipes. These were the big hit of Christmas Eve dinner.
