Cheers to another weekend! Earlier in the week my mom and I went to the movies. When we walked out of the theater around 9:15 p.m., it was still light out. All I could think was, “Woooah.” This, my friends, is why I’m crazy about summer. The days just never want to end, and flip flops are the shoes du jour. Early morning coffee on the porch and cocktails in the afternoon only add to the allure of this time of year.

It’s been a while since I’ve had a Drink and Links post here on IBC, so in celebration of all things summer, let’s whip up a cocktail and take a look at some awesome web content.

One of my favorite things to grow each summer is pineapple mint. Its variegated leaves, soft texture, and mellow flavor make me want to find any excuse to use it.

When I owned my B&B, I loved to include a stem of it in bowls of mixed fruit or yogurt and granola parfaits. It never ceased to amaze me how that one little detail made such a big difference in the look and taste of those standard breakfast items.

Anyway, today, I’m adding plenty of it to these delicious cocktails that are beyond perfect for summer. Along with the mint, pureed fresh watermelon, white rum, lime juice, and a little sweetness come together to create a thirst-quenching afternoon treat. And it’s simple to make.

To keep your watermelon mojito staying flavorful til the last drop, let me suggest this little trick: Cut some watermelon into small cubes and throw them in the freezer for a couple hours before making your drinks. Use them instead of regular ice cubes to prevent your cocktail from becoming watered down from melted ice.. The frozen watermelon cubes also double as a garnish and sweet snack.

Now, let’s make a few cocktails!

Watermelon Mojitos

(makes 2 cocktails)

Here's what you will needs:
3 large slices of watermelon (plus extra cubed and frozen for "ice" cubes)
10-15 mint leaves, plus more for garnish
4 ounces white rum
2 tablespoons simple syrup
2 tablespoons lime juice, freshly squeeze

In two glasses, divide the mint leaves equally and smash them slightly with a muddler or the back of a wooden spoon. Set aside. Remove the rind and any large or dark seeds from the watermelon. Then, in a blender or food processor, puree the watermelon.

To each glass, add ice (or frozen cubed watermelon), 2 tablespoons of white rum, 1 tablespoon of simple syrup, and 1 tablespoon lime juice. Top with pureed watermelon. Stir, garnish with a sprig of mint, and serve.
