Looking for a simple, yet elevated snack or meal? This Mediterranean flatbread is just the thing! It’s incredibly easy to put together with just a few ingredients.

Similar to a pizza, but slightly healthier, there’s a flatbread combo for everyone.

Instead of using tomato sauce, lots of cheese, and pepperoni, the base gets topped with hummus, olives, tomatoes, onions, and some freshly grated Parmesan cheese. Those are definitely some of my favorite things. and they add wonderful flavor to this recipe.

I’ve been wanting to try to create these for years, and I’m so glad I finally did, as it’s becoming a staple around here! You’ll love it too. Try serving them with this shaved brussels sprouts salad or broccolini salad.

  • I also like that the toppings are flexible – This is a great way to use those extra veggies or you could even add chicken for some extra protein if you aren’t in the mood for veggies only.

Ingredients

This recipe makes enough for 2 flatbreads, so you’ll have one to share with a friend!

As I mentioned, the ingredient list here is pretty simple! Here’s what you need to build your own Mediterranean flat bread.

  • Naan – if you haven’t tried naan before, you’ll love it. It’s perfectly pillowy and the perfect base to make these flatbreads with. I grabbed mine at Trader Joes, but you can find naan in pretty much any grocery store these days.
  • Red pepper hummus – I love the flavor of red pepper hummus, as well as the pretty color. Think of this as your “sauce”. (If you love hummus, be sure to check out my hummus sandwich!)
  • Grape tomatoes – slice them in half, lengthwise.
  • Kalamata olives – give these a quick rough chop.
  • Sliced green onions
  • Parmesan cheese – I recommend getting a block of parm and grating your own. When it’s pre-shredded, there are additives in the cheese, which prevent it from melting as easily as the freshly shredded variety. It’s not the end of the world if you opt for the already shredded version, but it may not melt as easily.

How to Make

  1. To start, preheat your oven to 425 degrees. Then, grab a baking pan and spray it with cooking spray.
  2. Place both pieces of naan on the pan. Spread each with 1/4 cup of hummus. Depending on how large the flatbread is (or how “saucy” you like it!) you can use more or less. Follow your heart here. 😉

  1. Top with the tomatoes, olives, onion, and your shredded parm.
  2. Next, stick them in the oven to bake for about 8-12 minutes. You’re looking for a crispy crust and melted cheese!

Lastly, slice, serve, and enjoy.

I told you! Other than cutting up a few ingredients, these are ready in no time.

Variations

There’s truly no limit to what you can put on these flatbreads! I love how these flavors play together, but I have tried a few other things that also were fantastic:

  • Add feta – I love feta cheese, and the salty flavor is perfect with these ingredients. I usually just sprinkle it on top of the parmesan, but you can use one or the other if you like.
  • Add banana peppers – If you want a bit of a slight kick, add some banana peppers on here. I usually prefer the mild variety, but if you want some spice, grab the hot version.
  • Top with shredded chicken – grab some shredded chicken and add it to your flatbread. This is a great way to use leftovers!
  • Swap out the hummus for pesto – I happened to have extra pesto leftover from this pine nut pasta salad, and used it on this flatbread as a whim. It was fabulous!
