As I’ve mentioned, one goal of mine this year is to be more intentional about the foods I’m eating. I’ve contemplated trying various diets: Whole30, Paleo, counting calories, etc., however none of these sound very appealing to me. I think that not being able to eat a piece of pizza, have a pancake on Sunday morning, or enjoy a cupcake occasionally would most certainly steal from my happiness. So, I’ve decided to lean in and create my own diet.

My goal is to consistently eat more healthfully. On weekdays I want to limit my sugar consumption as much as possible, cut out carbs, and stick to a diet of lean meats, nuts, veggies and fruit. I’m still going to drink coffee in the morning. I may even sneak in a Hershey Kiss once in a while. I also plan to not eat after 8 p.m. and eliminate or at least limit snacking. I found that over the past year I turned to food a lot for comfort. I also ate when I was overwhelmed, anxious / stressed, and procrastinating. Another goal is to recognize when I’m physically hungry and only eat then. I also want to eat more slowly in order to recognize when I’m actually full instead of continuing to eat until the point that I’m stuffed.

Now, I know those are ambitious goals. I plan to fail plenty along the way, but I’m actually excited about this change. This lifestyle sounds fairly simple and one I’m comfortable doing. I think that’s most important. Along with daily exercise, I hope this diet will help me shed the pounds I added over the past year and live a generally healthier life. I’ve also decided to eliminate alcohol (except for big occasions / celebrations) and drink at least 90 ounces of water daily.

Now don’t worry, I’m still going to bake and make lots of delicious things full of butter and sugar, but I do want to throw in some healthy recipes, too. The other day I saw this video on YouTube from The Lean Machines. The guys were making Chili Beef Wraps and recommended them for an after-workout meal or dinner. The wraps looked and sounded delicious to me, so I figured I’d give them a try.

While the ingredient list seems long, you probably have most of these things in your pantry. I also really love this recipe because it comes together in the blink of an eye. Prep, cooking, and clean up is under thirty minutes. Who doesn’t love that?

I used ground beef here, but I think you could substitute ground turkey or ground chicken. There will be slight change in flavor, but I expect the result would equally delicious. If I give turkey or chicken a try in the coming weeks, I will let you know what I find.

Chili Beef Wraps

These Chili Beef Wraps are not only delicious, but come together so quickly and are a healthy, low-carb dinner idea.

Ingredients

  • Place a large skillet on medium high heat and add your oil to the pan. Once warm, add the peppers and white onion. When the pepper and onions begin to soften (about 4 minutes), add the beef. Break up the beef and stir enough so that it doesn’t burn. Next, add the garlic.
  • Once the beef is almost fully cooked, add the rest of the ingredients: hosin sauce, soy sauce, chili sauce, honey, salt, pepper, ground ginger, chili powder, and green onions. Cook for a few more minutes until the beef is cooked through. Remove from the heat.
  • With your washed and dried lettuce pieces, fill each lettuce “cup” with a spoonful of the chili beef mixture. Serve and enjoy!

  2. Michael, these look great! I loved your whole post. My husband and I always try to avoid sugar except on Friday night and Saturday, and it has made a HUGE difference in how we feel. We also have cut out most ground beef and mainly substitute ground turkey. And our family and friends usually can’t tell the difference. Thanks!

    I wanted to say thank you for not only having printable recipes, but having most of them fit on one page. I’m old school and like to print out recipes I want to try out.   6. Hi Michael ! I love your “create your own healthy diet” idea, I’ve done the same. Get rid of most sugar, most fat grams, and starchy carbs, eat lean protein and water based carbs (veges/fruit) and it works! I still have a little cream and sugar in my morning coffee but that’s about it for sugar and dairy. I don’t deny the chocolate morsels or occasional glass of wine (only 1) but I’m never hungry and the healthy eating works! Together with staying active and lifting weights, I lost 15 pounds and feel amazing. Keep it up my friend, eating healthy is for LIFE and this recipe is perfect, can’t wait to try it.

  7. I made this recipe last night and it was DELICIOUS! Best of all, you’ve given me a new way to use hamburger. Apparently, my family gets tired of tacos, which is blasphemy, I tell you!

    1. Hoisin sauce is a sweet, spicy, dark red sauce made from soybeans, vinegar, sugar, garlic, and various spices, widely used in southern Chinese cooking. 🙂

  8. Michael, what you described above is pretty much the diet plan I follow, and it really is easy enough to do once you get into the swing of it. Significantly cutting out how much bread I ate was very helpful and noticeable. Just add in a bit of exercise, which I know you do, and you will see results. And don’t ever feel bad about a treat or splurge, because this is YOUR diet plan and that it totally allowed!

  9. You are totally correct…eat healthy. Don’t deprive yourself of a cupcake, but also don’t sit down and eat 24 cupcakes either! Eating healthy makes me feel good in so many way, i.e, physically and mentally.

  10. Michael, my husband and I are doing Whole30 and we are on Day 12. Thank you for this recipe, I’ll modify using no honey and none of the sauces. I made a chocolate chili last week that was delicious and Whole30 compliant. I could put that in romaine cups. Variety keeps us going and satisfied.

    I am mainly a blog lurker and never comment, but your post the other day was very inspirational and I think it is amazing that you put yourself out there to tell the world how you really feel. My husband is bipolar and our family has gone through a really hard time the last 6+ months, and so much of what you said was so familiar in what I have seen him struggle with, and myself as well. I’ve seen what being a people pleaser can do to someone so good for you to try and break that habit. Confidence and self love is a hard thing to relearn when you have lost it, but you can get them back. We started a gratitude jar in our home, I try to have everyone write something that they are grateful for down every day, or three, and then at the end of the year we can pull them out and read them. Some of the things have been serious, others have been silly. I am hoping that being grateful for the things that we have can help boost the mood in our home. Cutting out crap food is another great way to feel better mentally and physically, it is amazing how much sugar is in everything we eat.

    Small changes can provide you will big results over time, just remember every step or victory, no matter how small, is still moving you in the direction you want to go 🙂

  12. This recipe looks delicious!! I’m doing a Whole30 for the month of January and I think I will add this recipe (with a couple of substitutions) to my rotation. It’s partly because of your delicious cookie recipes, the soft pumpkin sugar cookies in particular, that I need to do a Whole30!! Thanks for the great recipes and other content of your blog. I truly enjoy it!
