Hello, friends! I hope each of you had a fabulous weekend. I certainly did. This was actually the first weekend that really felt like summer. On Saturday and Sunday I was able to spend some time with my family at my dad’s pool. It’s hard to believe tomorrow is already July 1 and that this weekend was the first day we dipped our toes in the water this season.

Anyway, this week I’m wrapping up IBC’s unofficial rhubarb series with a cocktail today and one more sweet treat (hopefully) tomorrow. Once I post these two recipes, it’s back to projects around the house. As I mentioned awhile ago, my bedroom needs a fresh coat of paint and a new look, so I’m hoping to get started on that this week. I’m also in major purge mood. Over the last couple years, with closing my B&B and purchasing props for blogging, my house has becoming overrun with “stuff.” I’m hoping to take some time to clear the clutter as well. Not that you want to see that, but hopefully it will allow me to make progress on other areas of my home.

So that’s that.

As promised I would share a few drink recipes using the strawberry rhubarb syrup I made last week. First up, as the title of this post suggests, I’m going to show you how to make a Strawberry Rhubarb Margarita.

I’m always on the lookout for new margarita recipes, especially in the summer. And I just love the way the strawberry rhubarb syrup works with this particular cocktail.

Strawberry Rhubarb Margarita

Instructions

  • Begin by running a lime wedge around the rims of four margarita glasses. Then roll the rims in sugar. Place an equal amount of the diced strawberry pieces in each of the four glasses; then fill with ice.
  • In a large pitcher, combine the strawberry rhubarb syrup, tequila, lime juice, triple sec, and orange juice by shaking or stirring.
  • Pour the mixture over the ice into the glasses. Sip and enjoy!

Notes

You can make strawberry rhubarb syrup at home. It’s easy, delicious, and has a variety of uses beyond this margarita recipe.

  1. OMG.. Made the Strawberry Rhubarb syrup over the weekend.. CANNOT EVEN DEAL!!! The blue margarita looks out of this world too! I loved your shop and only ever made it over when you were closing up. HOWEVER, I think you should do a purge sale. I’d love to come over, I live in Port Allegany, and shop through your wonderful finds!! Happy 4th!
