Happy April!

I can’t tell you how excited I was to turn over the calendar this morning. There is something about the first of April that’s a clear sign that nicer weather is just around the corner. So to celebrate today, I decided a drink was in order! Plus, it’s been a while since the last Drinks and Links post and I needed to catch you up on some things.

Today’s drink is a fun take on the classic mojito. A couple weeks ago when I went out to dinner with my mom, she ordered something similar to this and it was delicious. Mojitos are definitely one of my favorite cocktails, and I just love the idea of using basil instead of mint. It’s like a whole new drink, but with the same delicious concept.

Let’s mix one up!

Basil Mojito

Here's what you'll need:
2 lime wedges
8-10 basil leaves
2 ounces white rum
1 ounce simple syrup*
Club soda
Basil leaf for garnish

In a tall glass, muddle the lime, basil and simple syrup. Fill the glass with ice and then add the rum. Top off the glass with soda water. Gently stir. Garnish with a basil leaf or sprig and an adorable straw.

*Simple Syrup - Combine 1 cup of sugar and 1 cup of water in a small saucepan. Bring this to a boil. Simmer for about 10 minutes or until the sugar is dissolved and a thicker syrup forms. Chill and store in the refrigerator until use.

If you like your drinks on the sweeter side, you can use something like Sierra Mist instead of club soda. Now, go mix yourself up this refreshing spring-inspired cocktail and meet me back here for a few of my favorite links.

This sounds like a delicious twist on a mojito! The warmer weather definitely has me in a tropical drink mood 🙂 I don’t know if you’re interested, but if you dig herbs in your cocktails, I make a killer Lemon Herb martini. I guest posted the recipe ages ago here: http://www.peasandcrayons.com/2011/09/does-anyone-else-need-drink.html

I love the Oh Joy! party line at Target but wish it were decor and not party supplies – I love her style and would love to put it in my home. I would also love if Target did a collaboration with you!
