Strawberry Shortcake Smoothie

Thanks to the Internet, it seems that “hating Mondays” has become a thing. As much as I love the calmness of the weekend (especially Sunday), I certainly don’t mind Monday.

For me, it’s a fresh start. It’s a good reason to put my worries and the shortcomings of the past week behind me and start anew. There’s something about a clean slate that’s highly motivating for me. So, bring on your worst, Monday. I’m ready for you!

Today I’m just popping in to share a fun and tasty post I recently created. With a renewed focus on fitness and healthful living, I had this idea to create a nutritious smoothie post for them this month. However, it quickly turned into something just a bit more decadent: a Strawberry Shortcake Smoothie.

It’s not all bad though. I guess it falls somewhere between healthy and indulgent. The perfect mix if you ask me. Everything in moderation, right?

Anyway, what makes this a Strawberry Shortcake Smoothie is that shortcake pieces are actually blended into the smoothie to give you the warm cake-y flavor that you love in strawberry shortcake. Some whipped cream and more shortcake crumbles on top help too. Say what!? Yes, this is happening.

How to make a Strawberry Shortcake Smoothie:

The idea behind this smoothie is to recreate the classic strawberry shortcake flavor we know and love, but in smoothie form.

With that in mind, this smoothie comes together with strawberries, milk, yogurt and shortcake. Yep, I’m referring to those little shortcake dessert shells you can get in the bakery section of your grocery store. They are going right into the blender for this smoothie party. It’s a must to give it an authentic flavor.

After a quick whirl in the blender, the smoothies are ready to go.

Naturally, I top them off with whipped cream, strawberry slices and crumbled shortcake. When garnishing, I think it always helps to have the dish (or in this case, smoothie, look like what it is.)

Ingredients

  • 1 pound fresh strawberries freeze half*
  • 1 cup milk (or almond milk, soy milk, etc.)
  • 1 cup vanilla yogurt
  • 2 shortcake dessert shells
  • Whipped cream, strawberries, and crumbled shortcake dessert shell for garnish

Instructions

  • In a blender, add the strawberries, milk, yogurt and dessert shells. Blend on high until smooth.
  • Divide the mixture into 3 or 4 glasses to serve. Top with whipped cream, strawberry slice and a sprinkle of crumbled shortcake dessert shell.

Notes

Freezing half of the strawberries chills the smoothie and provides great texture.
