As I’ve told you before, Valentine’s Day is not my favorite holiday. I’m sure that if I wasn’t single, it really wouldn’t be all that bad. Given my current situation, it’s just another day.

This year, however, Valentine’s Day is going to be a special occasion because I’m planning a birthday lunch for my mom who is turning 60. I’m excited about the party, but at the moment I’m also a bit nervous. I talk a lot about stress-free entertaining, and I’m doing my best to keep things that way. Still, stressing out just seems to be in my nature. And, in some weird way, I think all that adrenaline is what fuels my creativity and helps me to get stuff done.

Today I’d like to share these delicious Peanut Butter Cup Rice Krispies Treats that I made last week.

In essence, it’s one delicious treat filled with another delicious treat that’s covered in chocolate. So, how can that be bad, right? Well, it’s not. It’s pure magical deliciousness.

To start off, you make Rice Krispie Treats just as you usually do, but you add in some peanut butter and then sandwich some peanut butter cups in-between. It’s so simple.

Today I'd like to share these delicious Peanut Butter Cup Rice Krispie Treats that I made last week. In essence, it's one delicious treat filled with another delicious treat that's covered in chocolate. So, how can that be bad, right? Well, it's not. It's pure magical deliciousness. To start off, you make Rice Krispie Treats just as you usually do, but you add in some peanut butter and then sandwich some peanut butter cups in-between. It's so simple. I used the little heart shaped peanut butter cups, but you can use regular ones. And because I wanted to add some color, I picked up these x and o sprinkles and added them to the chocolatey layer on top. Obviously, the sprinkles are optional. Without them, the treat will still taste and look just as delicious. Let's whip some up. Peanut Butter Cup Rice Krispie Treats Here's what you will need: 7 cups mini marshmallows 6 tablespoons butter 1/2 cup peanut butter 7 cups Rice Krispie cereal 15 seasonal (or 24 regular) peanut butter cups 2 cups milk chocolate chips 1 tablespoon shortening Sprinkles (optional) Begin by greasing a 9x13-inch pan with butter or cooking spray. Set aside. In a large saucepan, slowly melt the butter over low heat. Once it's melted, add the marshmallows and stir until melted. Then stir in the peanut butter. Next, add the cereal to the marshmallow mixture and still until completely combined. Press half of the mixture into your prepared pan. Place a single layer of the peanut butter cups on top the Rice Krispie mixture. Then add the remaining mixture over top and press down. Let cool. Finally, melt the chocolate chips and shortening in a double boiler. Or in a microwave save bowl, microwave at 30-second intervals, stirring in between, until the chocolate is melted and smooth. Spread evenly over the top of the Rice Krispie treats. Garnish with sprinkles (optional). After the chocolate is completely set, cut and serve the treats. Just adorable, right? If you're looking for a last-minute Valentine's dessert or small gift, I can't recommend these enough. Also, if peanut butter cups aren't your thing, feel free to layer in any candy bar you love.     Oh these look so scrumptious! How do you stay so trim and slim when making these wonderful treats all the time. I’m going to try and make a half batch since couldn’t eat a full batch on my own.
